As a logistics junkie, I'm loving the kitchen truck behind the scenes content. I'm curious. Does Owen have an assistant or sou chef or even a dish washer to assist him, or is it a one man show?
Chef Owen - Do you ever serve Quinoa? I hardly ever see it mentioned in cycling nutrition despite it being a superfood
Just going to jump in, during the tour, it's unlikely. Quinoa is a filling, slow-digesting carb. These guys need to eat a lot of carbs, you cant stomach that quantity with quinoa. Also, it's not really a "comfort" food. The house (truck?) made bread must be such a comfort to the riders. love it.
You said that you adapt what you cook to the type of each stage (sprint, climbing, flat stages). How it affects your menu then?
Ah, the gas bottles are different per country. Need to think of everything. Great vid.

What if you (chef) gets ill, say a massive migraine or cold, how do you plan around such a situation? Has to happen occasionally.
Just one question: where do you do the washing up of the pots, pan, plates etc?
Where do you do your grocery shopping? Especially for the fresh stuff? How many people are you cooking for each day? Thanks, was cool to see your Van - such a nice video! :)

Chef Owen, I noticed a thermomix and moccamaster in the truck kitchen. What kinds of things are you preparing in the thermie (I imagine soups), and how many of the team riders enjoy coffee from the moccamaster? Cheers for the overview, very cool!

Is the team able to accomodate for riders dietary choices - for example a vegan or a vegetarian?

Chef Owen, do new riders to the team need to conform to the dietary guidelines of EFE or if they are vegetarian or vegan (I assume Keto wouldn’t work in this carb heavy sport) do you tailor a diet to their preferences? I LOVE Behind-the-Scenes content. Thanks. That was fascinating to watch.
