    Ingredients
    Boneless Mutton - 1/2 Kg
    Chana Dal - 1/2 Cup (Soaked for 4 Hours)
    Onion - 1 No. Chopped
    Ginger Garlic Paste - 2 Tsp
    Kashmiri Red Chilli - 8 Nos
    Shahi Jeera - 1 Tsp
    Whole Spices
    (Cinnamon, Cardamom, Peppercorns, Clove, Mace & Bay Leaf)
    Salt - 1 Tsp
    Turmeric Powder - 1/4 Tsp
    Chilli Powder - 1/4 Tsp
    Coriander Powder - 2 Tsp
    Water - 1/4 Cup
    Chopped Mint Leaves
    Chopped Coriander Leaves
    Green Chilli - 1 No. Chopped
    Egg - 1 No.
    Oil
    To Make Green Chutney
    Mint Leaves
    Coriander Leaves
    Chopped Onion
    Chopped Ginger
    Chopped Green Chilli
    Black Salt - 1/2 Tsp
    Cumin Powder - 1/2 Tsp
    Juice Of 1/2 Lemon
    Water
    Method:
    1. Take cleaned mutton, soaked chana dal, onions, ginger garlic paste, kashmiri red chillies, shahi jeera, cinnamon, cardamom, peppercorns, cloves, mace, bay leaf, salt, turmeric powder, chilli powder, coriander powder in a pressure cooker and mix well.
    2. Add water, mix and place the lid.
    3. Pressure cook the mutton for 4 whistles on a medium low flame.
    4. Let the pressure subside naturally after that and then cook for sometime to let the mouisture evaporate.
    5. Transfer the mutton mixture to a bowl and let it cool.
    6. Take mint leaves, coriander leaves, onions, ginger, green chilli, black salt, cumin powder, juice of 1/2 lemon, water in a mixer jar and grind into a fine paste. Keep it aside.
    7. Remove the bayleaves from mutton mixture and grind the rest.
    8. Transfer it into a bowl and add chopped mint leaves, coriander leaves, green chillies, oil and mix everything well.
    9. Whisk an egg and add it to the mutton mixture. Mix well.
    10. Dab oil in the palm, take the mutton mixture, make kebabs and keep aside.
    11. Pour oil for shallow frying in a pan and heat it.
    12. Gently drop in the kebabs and fry them on both sides until the rawness is fully gone.
    13. Mutton Shammi Kebabs are ready to be served hot and nice along with mint coriander chutney and onion lemon salad by the side.
    Mutton is mandatory when it comes to non-vegetarian feasts for so many people. We can make several varieties with it like mutton biryani, mutton keema curry, keema paratha, mutton haleem etc. In this video, I have shown a royal Mutton Shammi Kebab recipe which has been loved by so many people for a long time now. This Shammi kebab is easy to make. All you need to do is to cook mutton with a certain ingredients first and then add a few more to make kebabs out of the mutton mixture to finally cook the kebabs. These kebabs are best served hot along with onion, lemon slices, mint coriander chutney by the side.
