    Something I forgot to mention is that all Persimmons are naturally high in tannins but especially when they are UNDER ripe. This means they might cause some gut problems.
    Keeping that in mind, here are some tips for happy eating: only eat RIPE fruit, discard the skin, and don't eat a crazy amount - especially on an empty stomach. Cooking the fruit also reduces tannins. To read more about this, check out my blog post all about Texas Persimmons below.

    I looked for a place to order Texas Persimmon Jam (in case you don't have any growing near you) but I can't find any. The closest thing is some places online that sell the seeds.     Oh my gosh! You are amazing 👏!!! Thank you! I just found an area with millions of berries, 98% still green. I didn't even think about freezing them. Gonna take the family to pick berries, bring'um home and freeze'em for later when I gots times a get to um.

    We have a line of Texas Persimmon trees along the back edge of our property - last year I made a bunch of jam and everyone loved it, but I've been struggling to get it to gel enough. I think I've been adding too much water and I didn't realize that acid (lemon) is important in the gelling process. About to give it another try with this year's haul - thanks for the tips!
