    This gastronomic knowledge in Peru is a good example of coverting cultural diversity into social capital as a whole country. Now, the next challenge for Peru is to shift up their society from a stage of social capital knowledge to a human capital development.

    Hello Ricardo, I loved this video you made. I have watched it 3 times, really. I will be in Lima for my birthday on april 22nd. I will be turning 68 and I will be by myself. Anyway, all the restaurants that you have beautifully described are incredible, but, unfortunatelly, not affordable for me. I sure will come by to have a drink at your restaurant to meet you. What I really would like from you, if possible, is for you to give me some tips of places, let's say, more down to earth, for people that can't afford such great restaurants. I have been researching about Lima since november. I am really looking forward to it. For example, the best ceviche at the Mercado N1 in your opinion. Where can I have an honest chicha morada? Not afraid to try the anticuchos if you tell me where they are. The best causa rellena com pulpo? At least ,this will be a good subject for your next post, real food in Lima for people that have a shorter budget, or something like that. I am from Brazil. Thanks, anyway.

    Really good video brother, I'm going to Lima on Wednesday. You didn't mention Sea Eggs or Urchins but I saw it a couple of times. In New Zealand we call it Kina and its a delicacy that most people can't handle but I love. Can't wait to try that!! Yumm!

    The food of Peru is the best in the world! Dishes such as estofado, seco, aji de gallina, shrimp cau cau, beef steak chanfainita, parihuela, chupe de camarones, arroz con pollo, juanes, paiche al horno, turron de Doña Pepa, chicha morada, and so on. It is ancient, and modern. It has been influenced by the Native American Indian ingredients, and dishes, such as pachamanca, carapulcra, and so on. In addition to immigrants, Asians, Europeans, and Africans, who contributed to its huge divergent cuisine.

    You didn't even mentioned other influences as the Italian or French. I will tell you my opinion about what makes peruvian food so special: Peruvian food is different because historically WE VALUED TRADITION AND DIVERSITY as other countrie also did, but at the same time WE UNDERSTAND TRADITION AND DIVERSITY IN A DIFFERENT WAY almost everybody does; AND THAT'S THE WAY WE BUILDED OUR CULTURE. For us, tradition is all about embracing and sharing. Each great migration, each new culture fitted to our society because the way peruvians enjoy to share our culture with others, embracing in that process new techniques, new products, to find a way to introduce them to our culture. THATS OUR TRADITION ; YOU CAN FOUND THAT EVEN AT OUR DEMOGRAPHY. Other countries define themselves as a mix of ethnicities or cultures, but in reality their societies are builded on ghettos, ethnicities doesn't mix with each others, and you can define a non mixed ethnicity majority at most cases. THAT EXPLAINS WHY CULTURAL TRENDS (included gastronomy) are DEFINED BY THE MAJORITIES, and caring that as an status quo (for them) is the way they understand tradition, just the way they builded up their societies, not better, not wrong , just the way they build it. AT PERÚ, the 70% of population is crossbreed, you can't found Ethnicity ghettos because trough generations we mixed up with others. As a consequence OUR CULTURE IS ACTUALLY THE CULTURE OF THE MIXING ITSELF AND TRADITIONS AS IN GASTRONOMY ARE A REFLECT OF THAT. Just think about our PRE COLUMBINE CULTURES AND HOW THEY MIXED UP BETWEEN THEM TROUGH THOUSANDS OF YEARS ending mixing up everything they inherit to the INCA'S CULTURE, and then all that mixed up with SPAIN, and the other INFLUENCES. But, Why all that was possible? BECAUSE BETWEEN THE MILLENIA AND TROUGH GENERATIONS, OUR PEOPLE BUILDED UP THE TRADITION OF EMBRACE AND SHARE DIVERSITY IN FLAVORS. That explain it all.

      I think you’ll find most local Peruvians don’t rate Central as highly as tourists do

      Because central features peruvian ingredients but not the dishes. He makes his own creative dishes with peruvian ingredients, but its not a representation of peruvian dishes.
