Awesome concept. Great base with so much potential for flavorings:
    - maple syrup
    - spices (nutmeg, cardamom, ginger, allspice, clove, anise, etc)
    - dried/candies fruits
    - chocolate
    - honey
    - berry jam etc etc
Or go savory like you said
    - since it’s white potato, make a gnocchi pie. Add a tomato sauce layer, basil, garlic, olive oil
    - any pot pie flavors (chicken, turkey, beef etc with a mirepoix etc)
    - prosciutto/guanciale/bacon/ham with cheese
With such a simple base, the possibilities are quite literally endless!

My family has made a savory potato pie for years. It is a recipe from my mother, but I'm not sure where she got it-quite possibly from a long-time family friend who is the daughter of Italian immigrants, born and raised in Chicago, Illinois. It has become a Thanksgiving holiday staple.
    2 cups mashed potato
    1 lb ricotta cheese
    1/2 cup sour cream
    2 beaten eggs
    Garlic
    Salt & Pepper
    Paprika
    Rosemary
    1/2 cup chopped scallions
    Grated Parmesan and/or Romano cheese
Makes one large/deep pie. Mix all the ingredients well and pour into a standard par-baked pastry crust (our family often uses a premade crust to use up leftover mashed potatoes). Spread the grated cheese(s) on top before baking. sauce.

My grandmothers used cinnamon, nutmeg, cloves, allspice and vanilla for sweets. Salt, pepper, sage, bay leaf, mustard seed, and dill for savory. Well, except for Uncle Henry, he decided that since the price of pepper went up he wasn't buying it any more.

Use shredded chicken, and a take on Chicken aka King, Bulk breakfast sausage, onion, bell pepper, and 6-eggs for about the last ten minutes or so, yolks still liquid to eat it hot, and fully set of you were going to have it cold for lunch.
I work on remote sites, and am always looking for lunch ideas beyond sandwiches. A slice of a savory version of this would be great. and, by the way I make savory cheese cakes with seasoned cracker crusts, and various meats as fillings.

I have a request. When I was a lad growing up in Northern Ontario, someone - not my Mother - made a carrot soup that was to die for. Normally I'd say that it was my Mother, because it WAS to die for and Mom was a tremendously excellent cook/baker, but she swears it wasn't her. I think it was our next door neighbour but sadly she hasn't been with us for a long time.
I know this soup was not creamy, wasn't pure liquid. There were very small chunks of carrot in it. It WAS a thick soup, not watery. If you come across this, or know of it, could you please make this recipe. Simple recipe I know but it was OH SO GOOD. Good enough to remain a warming memory after all these years.

i actually think glen's suggestion of making it savoury was spot on.

I think as a savory it would be a great dish for a buffet/potluck dinner. Maybe even increase and bake in a 9 x 13 pan, cutting into squares before setting out on the serving table. Seems like it would be easier for people to handle than regular mashed potatoes in that setting.

Cheese and potato pie was always on the menu when I was at school , you could add onions or sliced tomatoes too

You're a braver man than I. I never drop eggs into other ingredients. One bad egg and you have to toss everything. I either use a separate bowl for the eggs or drop them first.

I feel like this white potato pie is popular in the northeastern region of the U.S. I remember seeing this for the first time in a 1970s film that was made in Baltimore, MD. For years I have been researching a good recipe to try. Thank you for posting this.

One thing I do a lot is I infused liquids with tea. I use black tea often, and I bet if you brew a black or chai tea into the milk/cream before adding it to the pie filling, you could have a whole array of flavors available to be added. Including more savory options.

    Really interesting recipe.
It gave me an idea for christmas dinner/lunch: side dish of single portion mashed potatoes in crust. Leave sugar and vanilla out, put butter instead of cream, some hard salty cheese, and here they are, they would look great too on the table 👍🏻

I think I would leave out the sugar, add shredded beef, corn, white pepper and salt. Maybe a little horseradish? I’m not sure about that yet. Then serve it with brown gravy. You could call it pot roast pie. Or diced corned beef, and diced carrot would be good.

This is a Easternshore Maryland pie that blacks baked. I have family recipe from 1800's . You do need to add other spices. My relatives sell pies with our family recipe for events. And they are the number 1 seller.

Uhm take sugar out and add a bit honey instead. Maybe fried bacon, nutmeg, and maybe some spice such as cayenne pepper. Thinking something like spicy candied (million dollar) bacon in the potatoe pie would work but the pie would need to be less sweet. Really cool dish, thanks for sharing

I like it. It’s what you did with a cup of leftover mashed potatoes. It needed the nutmeg.

I had the good fortune of visiting Finland a few years ago. While there, I had mashed potatoes with lingonberries. I'm wondering if that combo would work out in this pie?

@@shelldie8523 the berry is close to a blueberry/pea in size. The berry is red and on the tart side, but was made with a slightly sweet sauce. I am thinking you could substitute the sugar for some Lingonberry jam/jelly (available here in the US), and keep the vanilla (or nutmeg, or both).
