I want to share with you our unique bolognese pasta that is cooked in the wild forest near the river! We make everything from scratch using organic ingredients and free-range meat. For our special sauce, we use very rare organic tomatoes that we grow at home. These tomatoes make our sauce taste amazing and we only have a few left from this season.

I am not Italian. But I have been all over the internet looking for the best bolognese recipe. So many people crying about every chef's rendition saying it ain't the way Mama did it.

Watching you cook -- frying over an open wood fire and making everything from scratch -- I could easily imagine that I'm watching an Italian peasant preparing lunch 200 years ago.

I love watching these videos but at the same time hate reading the comments. Italians, please try to understand something. National pride in your own dishes is great, but don't kick up a fuss every time someone outside of Italy try's to cook something and might miss the odd ingredient you would describe as authentic. Or even exclaim they have got it right! as if your some kind of personal food ambassador for your country.
Try to remember there are Italian communities all over the world, from New York to the back streets of London. They all have developed their own recipes and ways of doing things. Bolognese i believe is a universal WORLDWIDE dish that can be made a few ways to add further flavour and depth, Italy may have invented it but they don't own it. It belongs to the multicultural world we live in today. This goes for all classic world dishes. sorry Italians, not picking on you. Our national dish in the uk is chicken tikka Masala, but try explaining that to an Indian!

I totally agree, you don't see any other nation complaining about recipes on youtube. Btw, Spag Bol is regarded as no.1 or no.2 dish in Australia as almost EVERY family eats it on a regular basis despite our multicultural society.

Dude, I'm from Chile, and I've been learning a lot of Italian cuisine, but this is, seriously the best I ever seen.
I've made a lot of bolognese before, for family and friends but always have used tomato puree.
Looking for a no tomato puree recipe, and not only did I got the best traditional recipe but I also I've got how to make simple no BS pasta.

Those are very nice egg yolks. They are hardly even yellow but infact Orange as it is ment to be. You got some amazing and healthy organic chickens. Infact the research I have seen says that the more orange the yolk the higher quantity of important nutrients, minerals and protein profile the egg has within it.
It's the opposite, yellow is organic. The orange yolk is a sign of feeding beta carotin.

They don't show up 'cuz there's a fire going, they stay away from fires and very noticable in the fresh forest air & so they don't go near where they smell smoke ;)

really? I would have thought basil, celery and carrot would be prime ingredients. I always use them and the combination is so effective. BTW, I've never added cream, but would like to, but I'm worried about it curdling and ruining the end result. What do you think? And do I add at the end?

Should've asked Mr. Ramsay: He'd tell you that an "authentic" Ragu a la Bolognese starts of with the "soffritto", which is finely diced onion, carrot and celery in a 2:1:1 ratio. Otherwise, great video and delicious food as ever.

according to the Academia Italiana Della Cucina, an original ragù alla bolognese includes 300g of pulped or peeled tomatoes, but I often saw chefs adding tomato paste, which probably gives it a much more concentrated flavour!

It's unique but Japanese style santoku knives are very similar to this.
except this is far taller the usual, this is more like a Chinese cleaver.
Oscillator actually santoku are way different this is much more as a cleaver santoku are smaller and sharper
Well yeah.. I'd say it is a mix of a Chinese "cleaver" and santoku.
Blade is rather tall and thick. It however has that quite straight edge and rounded top. Unique knife nonetheless.

You can't buy them, only grow. They taste incredible, but only for 1 hour after picking. Also those are 100% organic tomatoes and a sort is very rare. :)

bolognese is a recipe that comes from bologna, the city of bologna actually has the proper recipe which is 100s of years old. so anything which steers away from the stated recipe can be considered not a bolognese.

You are a fool if you think this is the only way. Italy's official recipe's is in fact built upon a soffritto (carrots, onions, celery btw, 2 of which are missing from this version) along with pancetta, ground beef, milk, white wine, and of course tomatoes.
not even close, missing mirepoix, garlic, tomato paste, any kind of fresh herb, wine etcetc.

nah no pancetta bruh, at least in the north of Italy we don't use it. And it's usually a mix of beef and pork, beef may be too lean for this. If you go to a butcher an ask meat for ragù, he will mix a fatty pork cut and a relatively lean cut of beef. Milk is a no go btw. You may even go for red wine if you are looking for a deeper taste, but it's rare.
I'm a southerner (Siciliano thru ancestry) though I like to use beef and veal and just a little smoked Pancetta. I also like to use carrots, celery, and red onions + garlic, but only a little garlic. I also add a little porcini mushroom (reconstituted + liquid), adds some nice depth to the dish. Instead of red wine I use Marsala, not too much, just enough. I also add fresh parsley, fresh nutmeg, fresh black pepper, salt, and I saute' everything with a little olive oil (though some use butter). I like a little milk personally, but to each his own. I also finish off with some cream (in pan with the ragu, paste, etc., then serve it with Parmigiano Reggiano, though I sometimes use Romano, or mix the two together.
