The Persian word Gaz is associated with gaz-angebin which translates to 'Honey of Gaz', in reference to a species of Tamarisk, that is native to the Zagros mountain range located to the west of Isfahan. Gaz is traditionally presumed to be the sap of the Tamarisk tree.
Gaz dates backs to 450 years ago in Isfahan, when the sap found on the Tamarisk tree was combined with flour, bread, pistachios, almonds and chocolate in traditional and industrial workshops.

This is a great desert and it seems in Iran they still use old technology to make it and of course with human hands. Wonder what that white powder is? Is that confectioners sugar? I made it at home and used some natural raw honey but I burnt it a little. However, the taste was great but I kept in the freezer because 5 minutes I got out of the freezer it got soft and sticky but extremely delicious. This is a sweet I grew up with. It was sold by an old man in my hometown and it was heavenly.
