» THE TRADITIONAL FOOD IN MADAGASCAR
1. TSENA’NY TANTSAHA TALATAMATY: Rice Porridge + Chinese Noodle Soup
ADDRESS: Talatamaty City
OPEN: 3AM - 7AM (or whenever the police shut it down)
Four miles outside of Madagascar’s capital city, Antananarivo, lies Talatamaty City. Talatamaty City is home to one of the country’s largest local morning markets, Tsena’ny Tantsaha. Sellers open up shop at 3am, selling everything from produce to fabrics. And lucky for us, the market has no shortage of food to try as well.
🥣RICE PORRIDGE: Zebu (Malagasy cattle) and sausage are mixed with leaves, ginger, special Malagasy rice, porridge and spices.
🥡CHINESE NOODLE DISH: Pasta, macaroni, potato, mayonnaise and zebu skin.

2. TALATA VOLON’ONDRY: Sausage + Koba
ADDRESS: Talata Volon’ondry
OPEN: Varies
Talata Volon’ondry is a village located just outside of Antananarivo. The village is known for producing sausage and Madagascar’s national snack, koba.
🥔SAUSAGE: There are typically two types of sausage being sold - zebu sausage and a halal style potato sausage. This snack is frequently accompanied by local rum.
🇲🇬KOBA: Lay out banana leaf spines with banana leaves on top. Add a layer of rice flour to prevent the koba mixture from sticking to the banana leaves. Then add the koba mixture, a combination of crushed raw peanuts and sugar. Wrap it all up in the banana leaves and allow it to cook in a bit of water for 3 days.
Koba is beloved across Madagascar, primarily sold on the street or to people in their cars as they drive through a city. The fuel from the ingredients gives people energy and helps them stay full even when walking long distances without and source of food along the way.

I am a Malay from Malaysia. It's amazing to see our long lost siblings, the Malagasy people and their culture. Some of them looks like us Malay/Austronesian, some of them looks more like African, some of them mix from both.

I went to madagaskar this summer and it was great time. We spent time at several places Antsirabe, Ambositra, Morondava, Tulear, Ambalavao. I love zebu meat, bruchetta, koba, mofo gasy, and so many other things! Can't wait to go back next year!
I used to live in Majunga and Tananarive for 21 years. Scared to go back. Not safe anymore. 😭

Tapioca/taro leaves should not eaten raw. They contain oxalic acid or calcium oxalate which can destroy your kidneys

Lots of young people in Madagascar have access to media, social media, international news, trends, what's going on in the world etc. Just like in the western world. So they know. They just don't value material stuff as much as people do in the West. Difficult concept to grasp from a Western perspective, I get it. Happiness is a state of mind. I believe we malagasy are easily enclined to adopt this state of mind. Peace on you.
@@fanilo95 that’s been my impression whenever to travel to Madagascar. Mostly very friendly people who do what they can to make a living while being content with life. My Malagasy friends who have emigrated to Canada and the US generally don’t place a lot of value on material wealth, instead they elevate connections within their community! I think it’s a wonderful way of living.
It is like that in 3rd world countries, people struggle, but are happier overall because they don’t worry about material things. Im from Cuba and our people are the same, happy always.

Koba is really tasty.
The black center is really sweet and the external side helps to relieve this sweetness.
Don't put it in the fridge cuz it loses its taste when it's cold.
You can drink tea along with it. :)
This is a peanut type of Koba but there's also a banana based Koba that they sell near Gas Stations witch is also very very tasty and less sweeter than the peanut one.
