Chef Dom put his own spin on Italian Mashed Potato Cakes that is very easy to prepare and quick. You can make fresh potatoes or just use the leftover ones. Either way you will love these Italian style potato cakes.

Ingredients:
• 4 Large Potatoes (or you can used leftovers)
• 4 ounces of Genoa Salami (Diced)
• ½ medium Yellow Onion (Diced)
• 4 Lg. Eggs
• ½ cup of grated Parmesan cheese
• 2/3 cup of whole-milk Mozzarella
• ½ cup of Italian Parsley (Chopped)
• ½ tsp. of Salt
• ¼ tsp. of Black Pepper
• ½ cup of Vegetable Oil

My mother made these on Fridays, no salami. But, she rolled them like meatballs and put a nice chunk of mozzarella in the center, which turned into a soft and delicious filling. Great work gentlemen!

Wow! Whole new dimension to potato pan cakes! We actually used grated raw potato to make it a kind of batter, then add to the raw potato whatever you were doing. This recipe looks awesome!! Thank for this video!

These look absolutely wonderful! So, I'm half Italian and half Polish. Growing up, my Mema on dad's side (Polish) would make something very similar, no meat though. They were always served with sour cream, and apple sauce. Your Italian version looks incredible, and I'll play with my recipe now! Maybe combine a bit.... A touch of kielbasa in there.

They look fabulous! Question do the mash potatoes have butter , milk etc in them .
Hi Paula! No butter no milk. Just potatoes and a little salt and water of course. Hope all is well. Send my regards to the family.
But, you can add milk or butter also as long as it’s not too loose. Sometimes leftover mashed potatoes work well.
When I have leftover mashed potatoes, I make these. I add Italian breadcrumbs, if they are too loose. Haven't tried salami. Looks delicious!
I am going to try your recipe “ with the salami and all that…” I cheat and have made potato cakes and gnocchi with instant mashed potatoes. Forgive me.😢
