    I was watching Acre homestead pantry tour. She makes her salsa and then strains out the extra juice and cans it and uses it for Spanish rice. I'm going to try that this year with my salsa.

      Yeah, we always put salsa or tomatoes in our rice, idk why its just how most latinos do it. but it does help not having to use as much water.

    Here's a tip for canning a thicker salsa - Inuse a ladle to skim off the excess liquid after I've cooked the salsa. I can the "salsa juice" in pints to the next add later to a crock pot roast or taco meat. Makes another 2 for 1 product

    Thin it out! You can use Wyman's wild Maine blueberry juice or cran blueberry. You could even use white grape juice. Just because something is the texture that you don't appreciate when you open the jar change it don't let it sit for 10 years and don't throw it out that's not what we do. :-)

    Creamed corn can be tricky to use up. If you make Shepherd's pie, mix one can of the creamed corn with regular corn, if you make it that way.

    I have watched many videos of pantries belonging to homesteaders. I have to say that your pantry is very well stocked but more important than that, is how beautiful your food looks in the jars. I always look at the food itself and judge accordingly. Your liquids in the jars are so clear and rich looking. Your pickles even look like each piece was placed just right. In short I think you have the most delicious looking canned food of all the homestead ladies. Well done, I know that it was a tremendous amount of work.

    HI! Just wanted to share my learning for pizza with you! I do 500grams of wheat flour, half a cube of fresh yeast (about 10.5grams -> 5 grams of dried yeast), about 225ml warm water, a pinch of sugar to feed the yeast, 10grams of salt and olive oil. First mix up yeast, water and sugar (let ist sit for about 10 minutes until you see the yeast starting to work), than mix with flour. Let it sit for an hour, then knee in salt an olive oil. With olive oil work in batches of 10-20 ml a time. kneed until the dough does not feel that sticky anymore and add more olive oil (do about 4 or 5 times, until the dough is nice and smooth, that way you can roll it really thin and it gets crispy). The amount of dough is for 4 pizzas. Bake it in the oven for 15 minutes each at 250°C heat from top and bottom (you can stack the baktngsheets in the oven, but each pizza has to be at the top for at least the last 5 minutes to get really crispy and white browned cheese...) It was quiet challenging to get my boyfriend away from storebought freezed pizza, but this recipe did it!

    Thank you for sharing. I'm prepping like a nut. I was able to get 600lbs of red winter wheat berries from a menonite farmer who is all organic! That's 24 5gal buckets. I washed out all the buckets today. Tomorrow I will make sure they're dry then load them up with oxygen absorbers.

    ❤️❤️❤️❤️❤️ thanks for talking about ebelskiver! I had never heard of it. I paused the video, researched it, and went on Amazon and purchased a cast iron pan to try these! Looking forward to a new recipe! Also, I had heard Jessica from Three Rivers Homestead talk about Pamona’s Pectin, but had no idea you can use it to make lower sugar jams!! I then paused your video again and went back on Amazon and bought some to try along with a cookbook full of recipes that use it. 👍👌❤️ you have lots of good ideas!!

    When you can chili can the meat and sauce and then when you open it add the beans. The meat and beans together make it very dense.

    I just canned hit pepper peach salsa for fish topping and trying to keep everyone hands off candied Pepper's I grew so many hot peppers and you think even grandkids wouldn't eat them but on a cracker with cream cheese or cheese or chicken sandwich it disappears and to say no no to people stopping by wanting it. If it didn't sale for $65.00 a half pint jars I do my own. Take the seeds out. Yum. I even made a zucchini salsa that you boil the water down to make it thick and I use mine on lasagna.

    You can get food grade buckets from bakeries. The icing comes in them. Most places will give away or sell very cheap!

    I learned to not bother skinning or deseed tomatoes anymore. Rather I cook them down a bit in a big 18qt roaster I got at Goodwill for $6.99 and then I use my immersion blender before combining them in sauces. Best trick ever. Ball has a nice a southwest chicken soup recipe. I prefer subbing roasted corn broth instead for the tomato juice. Nice job, especially for your first year. Kudos! 👍🏻

    Azure Standard has food grade 2 gallon buckets, as well as 3.5 gallon buckets, and gamma lids that fit. The company ULINE sells different sizes of food grade buckets with twist lock lids. I will say, Azure Standard is definitely the best deal for buckets and gamma lids.
    For your first year, you’re killing the game…great job! I’m in Massachusetts, might I ask how far north you are? You mentioned planting fruit trees, I know apple trees do well this far north but, I am interested in peach trees and, for some reason, I don’t think it’s warm enough here.

      Peach trees will do fine in MA. Just find a cold hardy variety.

    I have a large basement and bought 14 h/d shelving units. I'm working on getting what I can down there. Also, there's an 8'x7'8" pantry next to the kitchen. It was a multi purpose room with a shower, sink/vanity, W/D. I took all of that out and put in built in wood shelves. Love it!!!!!

    To help many Walmart is a mall on shopping for anything on line I got massive bulk seasoning, my bucket's, jars, now on something's they have a limit . Just bought up Asian sauces to make fried up veggies yum.

    The Ball electric canner lid fits nicely on the blue metal canners. It keeps the water from splashing out while its boiling.

      Get the ball canning book and just start. I started with jams and jellies. I made some syrup because a batch did not set up but blackberry syrup is still very good. Jams and jellies only need a water bath canning. Just follow the directions and you will be surprised how much you can get done

    Not a fan of pizza myself but was converted after trying America’s Test Kitchen Chicago thin crust recipe. The only thing I changed was the way of transferring to oven. Replaced cornmeal with parchment paper.

    You have done a great job. It looks beautiful. If I could make a suggestion and maybe you have done it already but I can’t see it. It’s important to keep your food storage up off the floor. I have found some pallets that I have put my buckets on.

    I get all my buckets at Walmart bakery dept. If you ask them to save them after they empty them. They get their icings in them. I haven’t payed anything. Any store that has a bakery in them get these buckets. They usually throw them away. They have smaller ones also.

    For your too liquid salsa, pour it into a strainer to get rid of the extra liquid then it should be the correct texture for dipping.

    I use Roma tomatoes for my salsa- I do peel them, but I chop the onions, peppers and tomatoes in large chunks and this keeps the texture through the canning process

    You can get both two and five gallon food grade buckets and the Gamma lids for a great price from Azure Standard. Buying bulk foods from Azure is the very best way to go as well. I have built a huge walk in pantry that is filled with food from Azure.

      Unfortunately Azure Standard doesn't come anywhere in northern Michigan. I get my bulk food from our local Amish.

    I have been in my house for a year however my canner was destroyed as was my electric wheelchair. I didn't use a company so there's really nobody I can sue and I need an electric wheelchair badly! I've had one for years now and it makes going out so much easier. I haven't been out of the house in a year. Be well and keep canning! :-)

    You have a nice looking pantry with your canning. It wouldn't look very nice with all that glass in a shattered heap on the floor I the coming earthquakes. Take1" x 1" s and place them aboy 3"s above the shelves to keep anything from falling out. The sooner the better!

    The sliced apples are really good in a apple crisp. I mix up a bunch of the crisp topping and keep it in the freezer so when I want to make it I will poor out a jar and add the topping and bake. Easy treat

      @@susanpeterson8773 I have used almost all I put up last year of the sliced apples I also made a bunch of apple sauce last year. This year I will just do sliced apples because of the apple crisp. I still have a lot of apple sauce left over.

    very impressive nice set up. may i suggest you go to local food stores that have a bakery or deli you can get those buckets in various sizes . for free or for very cheap with the lids can save you big bucks on the food grade buckets, then just invest in the gamma lids for easy access to contents . We have a Giant food store and local Weis that literally gave me 8 5 gallon buckets and 5 3 gallon with all the lids we had to wash them some had icing still in them but free is helpful and i won't complain about cleaning them i would clean them brand new anyway, right? I'm actually doing major dehydrating to save storage and after the ball issue thru the last 2 yrs being so hard to find and lids near impossible, (still can't get the wide mouth lids right now) i invested in a second dehydrator and began drying and powdering garden goodies and am very happy with the outcome, thank you for sharing and allowing us to share with you.

    Look on line for Mel's kitchen, the best homemade salsa. I agree, we like thick salsa. It is not runny. I canned 30 pints. So good.

    I managed an ice cream shop that used two gallon buckets for their product. Call a local shop that hand scoops and see if they would sell you some.

      I use an immersion blender for my 26 quarts of marinara sauce! I lived in Italy and learn to make the real deal from an old grandmother. :-)

    I see no hot peppers in your Pickles slice and out in about four and onions and when you try that pickles you will say why haven't I done this. Or sweet pickles zucchini with onion and hot pepper it's ever wow to add to egg's, pasta salad. Then the zucchini relish wow

    Fire House Subs will sell you their used food grade 5 gal bucket with lid for $5.00. All proceeds goes towards fallen firefighters etc.

    We are just starting out and want to store our rice and beans properly. We have them in the freezer now but before you store them away how do you make sure there’s no condensation in the food so it doesn’t spoil? 😵‍💫 haha!

    I know tons of people who have given up on the water bath canner because it's just as easy to do in the stock pot or wide soup pot like I do. I need to be spending my money on jars not 175 water bath canner that's just me we all have our own ways of doing things.

      For sure. I got the electric canner because my electric stove is terrible. If I had a nice gas stove, I likely wouldn't.

    You should buy more local honey because it is the only food on earth that never spoils. If it crystallizes, just place the container on a warm water bath and it will be runny again.

    New subscriber here. I just love your pantry. We have a large coat closet we're gutting to make my pantry. I'm so excited I can't wait for it to get finished. I did have plastic Walmart shelves but to have a real one is special. Thank you for the tips about canning supplies I will be looking out.

      No. I haven't use mylar because it is a working pantry. We are always using it and rotating through.

      I typically don't, because I don't consider it long-term storage. It is a working pantry. I am always using it.

    Your's is like ours and we have a massive bedroom full as our store and for buckets I spent the money and bought twisted tops for the five gallon buckets. But I also have like one packed with spaghetti noodles when they were $.50 and now$3.45 wow but I've taken over another room with 89 half gallon of dehydrated foods as I like to find how to room them to one. The hording of food is crazy but I can't read two year's in what our government is up to. Like them hording billions of cheese in two massive caves in Kansas and dumping out truck loads of milk. So what are they up to. Ya store up people don't knock on our doors for a thing.

    Onions should be hung in pantyhose look for a video it's the old way but it's the best way. Also when you chop or cut your red onions put them in water for 3 to 4 minutes a bowl of water and it pulls out all of the sting if you go longer it will pull out all the onion flavor as well so anywhere from 3 to 5 minutes. Pumpkin puree is not an approved item to can because it is very dense and density is an issue with the heat getting all the way to the center of the product. You can them in chunks then do what you want once you want to use them.

    WALMART SELLS THE 5 GALLON AND 3 GALLON FOOD GRADE BUCKETS ONLINE FOR $3-$5. THEY RUN OUT PRETTY QUICK BUT USUALLY RE-STOCK WITHIN A WEEK OR LESS.
