  • Today I made these super cute minion themed lemon curd jam tarts. The whole how to recipe is completely homemade from scratch, but it is pretty easy to make for yourself at home. Give this a go and you’ll see exactly what I mean, they’re absolutely delicious.

    To make this for yourself you will need:
    For the homemade lemon curd:
    ♡ 200g/7oz/1 cup caster sugar
    ♡ 100g/3½oz/½ cup unsalted butter, cubed
    ♡ 3 medium eggs
    ♡ 1 medium egg yolk
    ♡ 4 freshly squeezed lemons, juice only
    For the pastry:
    ♡ 250g/8⅚oz/2¾ cups plain flour
    ♡ 250g/8⅚oz/2 cups icing sugar
    ♡ 125g/4½oz/½ cup unsalted butter, cubed
    ♡ Pinch of salt
    ♡ Splash of milk
    ♡ 1 large egg
    ♡ Butter, to grease
    For the decoration:
    ♡ Royal icing
    ♡ Blue & black food colour, I use Wilton - amzn.to/1R7kVyr
    Equipment you will need:
    ♡ Tart tin amzn.to/1SAjMLl
    ♡ Mixing bowl
    ♡ Heatproof glass bowl amzn.to/1NSLPU5
    ♡ Saucepan
    ♡ Whisk
    ♡ Spoon
    ♡ Piping bags & nozzles amzn.to/1pB0ihS
    Method:
    1. To make the lemon curd, put the lemon juice, butter and sugar in a heatproof glass bowl over a saucepan of simmering water and allow to melt completely, stirring occasionally. Then add the beat eggs and egg yolk and whisk well. Then allow the mixture to cook for around 13-15 minutes until it starts to thicken. You can check it’s done by seeing if it coats the back of a spoon. Allow to cool completely.
    2. To make the pastry, put the flour and icing sugar in a mixing bowl and add a pinch of salt. Give this a good mix up and add the cubed butter. Rub the butter into the dry ingredients until it resembles fine breadcrumbs. Then add the beaten egg and mix until the mixture starts to come together. You may need a splash of milk too. Turn the dough out onto a floured worktop and bring together with your hands. Wrap in Clingfilm and chill for half an hour.
    3. Once chilled roll out to 0.5cm thick and use a fluted cutter to cut out the pastry. Place the disks into a greased tart tin and gently push down to fit. Then fill your cases three quarters full with lemon curd and brush the edges with beaten egg to glaze. Then bake in a preheated oven at 160°C fan/350°F for 12-15 minutes or until the lemon curd starts to bubble. Once baked allow to cool completely.
    4. Decorate using royal icing and a little food colour and get creative, making lots of different faces.
