I don't think I've ever cried watching a baking video. When Jemma came on screen my eyes just started sweating I promise I'm not crying.. She was the reason why I started baking and I'm baking a lot now and I'm glad people love them and just seeing Jemma becoming a mother with a successful business and coworkers she can count on with a wonderful support system, my eyes are sweating again.

NYC Style Raspberry and White Chocolate Cookies
Ingredients:
135g Caster Sugar
135g Light Brown Sugar
190g Cold Butter Chopped
300g White Chocolate (caramelize half)
15g Freeze Dried Raspberries
415g Plain Flour
10g Baking Powder
1 tsp Salt
2 Eggs, beaten
Preparation:
1. Start by mixing the sugars with the butter using an electric mixer till it forms little nuggets. You do not have to cream the mixture.
2. Next, add the white chocolate chips, chopped Caramelized white chocolate and the frozen raspberries. Mix it together till the ingredients are evenly combined.
3. Add the baking powder, salt and flour. Mix it together. The mixture should be very crumbly and sandy.
4. Lastly, add the egg and mix it together. The mixture should start coming together and form a dough. You can do this part by hand.
5. Weigh out 125gm balls of the dough. Then, freeze these balls for ATLEAST 2 hours.
6. Before baking, preheat the oven to 180-degree Celsius. Place a baking tray in the oven 5 minutes before baking the cookies. The hot tray will help to crisp-up the bottom and the cookies will stay gooey in the center.
7. Bake the cookies for 14 minutes.
8. Let them cool for just a few minutes.
9. Enjoy!

One of my favourite recipes, which I've baked about 6 times in lockdown. Thank you!
Further tips: It really is worth caramelising the white chocolate. Chop the caramelised chocolate into big chunks, otherwise it'll just melt into the cookie-which was still delicious-but pools of the choc in the cookie are even better.
The last batch I tried was with frozen raspberries.
After the addition of the eggs, I added in around 40g of broken up frozen raspberries. Did it by eye, and added a few more depending on how the raspberries were distributed in the dough. Added last so the fruit didn't make an almighty mess of the dough.
Weighed out the cookie balls a smidge over 100g, and even whacked in a whole frozen raspberry in the centre. The dough got progressively stickier (and pinker), but not enough to be difficult to handle.
Froze and baked as instructed.
Freeze dried raspberry version cookie was a pale golden colour after 15mins, crisp outside, slight gooey centre, and flecks of raspberries throughout.
Frozen raspberry version were pale brown on edges with a marbling of purple pink over the surface after 15mins, raspberries had melted into the dough and was very gooey in the centre.
So basically this recipe is delicious whichever you go with and I think this channel is outstanding.

@@lujain345 No problem. They were both equally enjoyable. Frozen raspberries are easier and cheaper to get ahold of though. They also made the centre that little bit extra gooey, which is no bad thing imho.

Well I’m a 60 year old guy who’s just retired and bought a mixer and I’m loving all the recipes you put out to us all. If using frozen raspberries would you fold them in to the dough at the end so they do get totally crushed and mushed? I made the Red Velvet and they were a hit!

It's the school holidays right now so I ordered a cookie kit to make with my son. It was a BIG hit! I quite often bake my own cookies/cakes but having the kit arrive in the post made this more of an "event" in our kitchen. Worth every single penny as the end result was an AMAZING COOKIE!! 😍🤤

Caramelized white chocolate is amazing! I made it recently for my son and his fiance (wedding cake planning!) and it was awesome. I can't have it around the house because I eat it all immediately - no will power when it comes to that yummy flavor! Can't imagine how great these cookies will taste - have to get the ingredients together and try them out later!
