    This bakery focuses on home-cultivated leaven and organic ingredients.
    Using an original oven with a large burner attached to a French wood-fired oven, the owner, Mr. Tezuka, creates about 25 kinds of bread from scratch alone.
    It has a wide variety of bread like sourdough bread, baguettes, rye bread, croissants, danishes, and Japanese sweet bread, and it is a pleasure to watch.
    Leaven (sourdough) is made from raisins and has been carefully cultivated over a long period. This leaven is what creates the original flavor of the bread at Kokuzo. All bread, from large loaves to viennoiseries, is made from home-cultivated leaven without baker's yeast.
