Red Whoopie pies

  • A fun sweet snack to enjoy anytime. This Red Velvet Whoopie Pie, has two moist cocoa flavored cakes, accented by a smooth cream cheese filling in the center. The addition of sprinkles make this Whoopie Pie both delicious and festive .
    Ingredients:
    o 2 cups all-purpose flour
    o ½ cup granulated sugar
    o ¾ cup brown sugar
    o 1/3 cup unsalted butter
    o 1 ½ teaspoon vanilla extract
    o ¼ teaspoon salt
    o ¾ teaspoon baking soda
    o 1 egg
    o ½ cup buttermilk
    o 3 tablespoons cocoa powder
    o Red food coloring
    Cream cheese filling:
    o 8 oz cream cheese
    o ¼ cup unsalted butter
    o 1 ½ cup confectioner’s sugar
    o ½ teaspoon vanilla extract
    Instructions:
    1. Pre heat oven to 350 degrees. In a bowl combine flour, cocoa powder, baking soda and salt. Set aside for use later.
    2. In a mixing bowl add butter, mix on medium until smooth. Pour in sugar and combine. Add egg and vanilla extract, mixing on medium. Add flour mixture to the batter, one half at a time. Rotate in buttermilk. Mix on medium, until batter is smooth.
    3. On a prepared baking sheet, place 1.5 -2 tablespoon scops. Place scops 2.5 - 3 inches apart. Bake for 10-12 minutes.
    4. To make cream cheese filling, add cream cheese and butter to a mixing bowl and combine. Add confectioner’s sugar to the bowl, mix until smooth. Finally add in vanilla extract and combine. Spoon or pipe filling onto one side of the whoopie pie cake. After filling is being added, place other side on top. If desired add fun sprinkles, around the fillings edge.
