    i'm in culinary school and i always looked up to you when ever i didn't understand the steps of the recipe, i'm more of a hands on and watch video rather than reading the book, i like visualization, thank you chef john for the videos and instructions....

      Usually i depends of the school's direction, our school teach the students classical French cuisine meaning the old fashion way, chefs usually frown and scold me when I do things that I have read at food book and watched from youtube that was away from what they taught at lecture. there I get to appreciate the importance of the basics, before you do your own style you need to learn the basics.

    If you want it to come out beautifully and NOT stick when you let it rest and it wont come out of the pan just turn on your stove top for a minute to warm the sugar and it should slide right out when you flip it! The sugar/caramel just tends to stick as it cools.

      Thank you, I was afraid this was going to be completely ruined. I'm going to use a cast iron pan, not exactly non-stick and I've had trouble getting the center of pineapple upside down cake out. Like, every time.

    So basically, if you buy the pie crust pre-made (didn't do it, nobody saw me do it, can't prove anything), then this tart has 4 ingredients: the pie crust, the apples, sugar, and butter (with the acid added to the water to prevent apple browning being the optional 5th). Seems like a super easy and cheap dessert for dinner parties to me, which doesn't require a long cooling period. And I love desserts you can actually eat warm! This one's a winner ;)

      Consider that a pre made crust will not be made with butter, and if you own a food processor you can make it in 5 minutes the day before.

      Puff pastry. And you can let the apples / caramel cool down before crusting.

    Ahhhhh :D I just made it and Chef John it was amazing! I only had medium sized red apples so I used four of them but it was so so so so so tasty my god the caramel is so good. There was so major rearranging when I flipped it over but it was beautiful when it cooled -- thank you!

      Me, too! Saw the plum tart fail and immediately looked for this one. Maybe plums would make a good tart if they were partially dried? Or perhaps use plumped up prunes?

      Rita Kelly I guess plums with caramelized sugar just don’t work together? Maybe if you just baked them in a tart and allowed them to steam in their juices. I don’t think you’d be able to get the same kind of glaze as you do in the apple tatin, but it would still be good.

    I just made this recipe and it was great. It didn't look as good as yours, but it tasted amazing and was really easy to do. The finished product looks like it took a lot more effort that it did. A keeper for sure!

    I have learned so much from watching and reading this guy's recipe on his CZcams channel what amazes me is that I do not have to pay to take classes in order to make some "fancy" meals. In this economic hardship, I have a job that pays me less $8 for 6hrs, and this is the only thing I have for a amazing dish I can serve myself, family, and friends.

    Hum, so much different than the recipes I've seen (and tried out here is France) ! We tend to use a lot more butter, then start the caramel and once it's a little golden, put the apples in. Then it's pretty much the same :) and it doesn't stick ! Looks so good I love tarte tatin

    Here is the version from a very expensive french enameled TT cast iron company: do the caramel first, put in the butter after the sugar is molten, put in at least 2 lbs. (!) of apples, placed on edge not thrown in "somehow", deglaze with Calvados, throw some puff pastry over it. Bon appétit!

    Actual french technique: You cook the apples in the Butter sugar syrup with a closed Lid for 15-20 minutes, the Caramel gets much richer Ehen you then put off the lid and crank the heat Up. For the cooling: if you could it completely in the fridge and then warm the pan up a few seconds over a very high heat, you have no problems releasing it in a whole from the

      You cannot make the caramel in a pie pan. Sure, you could make the caramel in a saucepan, then pour it over the apples in a pie pan. But when you use a pie pan, you lose the rusticity and flexibility of this method.

    I'm on a diet and trying to live a healthier life, but this looks so delicious I simply can't resist it! I just have to ask if it's possible to substitute the butter with organic yogurt and the sugar with molasses or barley malt? I'm also thinking some cinnamon might fit for this recipe!
