About biting the noodles, I think there's a bit of a misunderstanding.
On birthdays, as a tradition, we eat a bowl of noodles called "longevity noodles." At this special moment, the noodles, which symbolize a long life, shouldn't be bitten off.
However, for everyday noodles, there are no strict rules. It's really up to personal preference.
For example, I prefer not to bite them because if I do, the noodles left at the end will be quite short.

The "peanut" sauce which you put into your bowl of soup noodles originates from Chiu Chow an area in the north eastern end of Guangdong province. It is actually ground-up peanuts, ground-up dried shrimp and ground- up chili, garlic etc. mixed in sesame oil. The sauce helps to spice up and brings umami to whatever you are eating and complements your beef ball, beef slices noodles. This particular sauce called 沙茶醬 (pronounced as Sha Cha ) is also popular in Southeast Asia having been introduced by Chiu Chow Chinese emigrating into these countries in the last century or so. As both of you are so open-minded with various types of food, you will enjoy your culinary adventure in Guangzhou.

I am a Chinese who has lived in Germany for more than ten years. I really like this couple's travel videos recently. In fact, I found a very good evidence that they are not used or hired by the Chinese government. There are several videos about Chinese food in their videos. But these restaurants look ordinary, small restaurants on the street, and they cannot represent high level Chinese cuisine. But they enjoy these ordinary foods. If they were really hired by the Chinese government, the Chinese food they filmed should be in luxurious and high-end Restaurants.
Have a good travel in Guangdong. Wünsche euch eine wunderschöne Reise in Südchina. Übrigens komme ursprünglich aus Nordchina heißt Dalian, also herzlich willkommen auch in Dalian.

The Guangzhou Metro Line 3 (the one you took from the airport) is the BUSIEST metro line in China. It has an average of 1.4 million passengers per day and has a record of 2.5 million. If you take line 3 in rush hours you will have the chance to try what locals call the "automatic getting on and off system" (people will push you on to or off of the train). I recommend trying line 3 in rush hour and specifically Tiyuxilu station. This station is famous in Guangzhou and even China for its busyness. Other than that, enjoy Guangzhou! It's a beautiful city with modern areas and a lot of history as well.

The home of DIM SUM! One of the best meals on the planet! Can't wait to see you two eat your way through some of the best food in the world, they've had thousands of years to perfect textures, flavors, and ingredient combinations. Cantonese is the main language. If you like somethings and want to compliment and thank those that made the food for you, say (Ho' Sik) The inflection is on the first syllable. They will be grateful and be appreciative you made the effort. There are also two ways main of saying "Thank You" in Cantonese. In total there are 4-6 ways. Memorize the main two by looking up videos "How to say Thank You in Cantonese".

In fact, I think there is only one special kind of noodles in China that you can't bite off. It's called longevity noodles. Chinese people eat this kind of noodles on their birthdays. In a bowl of longevity noodles, there is actually only one very long noodle that symbolizes longevity, so you have to eat it all at once. Other kinds of noodles can be directly chewed off

You finally come to Guangzhou. The weather is very hot. Be careful not to get heatstroke. You could try the food beside the noodle on the menu. It’s made of rice. It’s local food. Don’t worry about being too spicy at local restaurants especially Guangdong food. Because the local people don’t like eat spicy food. And remember to try Guangzhou Morning Tea. This is one of the must-eat delicacies in Guangzhou.😊

Guangzhou is the new name of Canton a port frequently visited by
foreigners in the past. This port is where the British brought in their opium and when the Chinese people
attacked and threw away their opium the British sent in their navy
in the Opium War resulting in the annexing of Hong Kong for 99 years. Most Hong Kong people are from here.

actually,about110years ago,Guangzhou city was called Canton, which was like the French translation of Guangdong. how come people called a city with the Province name? just because the city was called by locals as "Guangdong shaan shing"(Capital of Guangdong),for short quite often just Canton. Hence Canton from then on has been referred more often as the City's name rather than the Province.
Guangzhou,or Kuangchow, was refferred as an larger area than what it is now . At that time of Qing dynasty Guangzhou included most of the PearlRiver Delta, including Dongguan city, Zhongshan city, etc.

"Canton" is the Cantonese pronunciation of "Guangzhou", and the two refer to the same place. "Hongkong" is also the Cantonese pronunciation, and its Chinese pronunciation is "Xianggang".

Chinese Malaysian here. Yes, I also heard the superstition that we shouldn't bite the noodles off but that applies more to the noodles that a birthday boy eats obviously for longevity reason.
I also bite off the noodles if they are too long. But I normally eat by placing the noodles nicely on the spoon and eat it from the spoon just like Naomi.
You can try Cantonese food like dim sum, cheong fun (flat noodles 肠粉).

Noted that you have planned to Yunnan afterward. I strongly suggest that you take a travel to Dali too which is a district in Yunnan. A couple vloggers from Scotland are also on their way exploring in China. Recently, they have at first planned to travel to Dali for 1 day but at last, using their words "they have stucked there" for 14 days because they have been so much enjoyable there.
