    I love elderflower flavour, so refreshing! In my 1st attempt at this I was working at Glastonbury festival, made it, left it in my truck and it was baking hot so 30-40 degrees C in the truck during the day and it went fizzy, so I reckon it had started turning into alcohol, very champagne like, anyway it was delicious and went in with my gin instead of water bottle from then on 👍

      Hah yeah the natural yeast on the flowers would have been converting the sugars to alcohol. I’ll be doing a video on that at some point

    Nice one, I have been removing sweeteners from my diet.I fairly sure they will be the class action lawsuit of the future. Made an Orange/lemon/lime cordial the other day, it is so much nicer than the commercial offerings. I'll give this a try this afternoon, always liked it but hard to buy without chemicals in it now.

    Small tip . Roll the lemon with palm of your hand to soften it and get the juices flowing before you cut it 👍

    I just finished planting a dozen bare root Elderberry plants (two varieties for pollination). Can’t wait for them to start producing in a few years. Would love to try this recipe! Another interesting video. Thank you!

    Made some a few years ago while much further south than I am now... was absolutely delicious!!! Love elderflower cordial but not many elder trees where I am in Scotland now :(

    Granulated sugar works just as well, just takes longer to dissolve

      I always sea them in hedge by the road most, I can't stop were they grow 😢 but recently found a feild with them around the edge and grave yard! Happy

      Many people say don't pick elderflowers near busy roads because of exhaust pollution. However last year I couldn't resist because there were some stonking flowers on my nearby main road. It was just as delicate and delicious as always.
      I suppose there's something to say about the growing number of electric vehicles!

    I really wanted to do this and so I picked flowers from my garden tree and left it outside for the bugs to leave, but when I brought them flowers back in they were dropping tiny little insects by the thousands 😮

    If you were making a champayne what alternatives could you use for sugar and are the lemons necassary? thanks Aidan

      It’s the yeast feeding on the sugar that causes fermentation and produces alcohol, so sugar is needed. You could use honey but that would be making mead.
      You could do without the lemon in this recipe, lemon helps when you’re boiling sugar as it stops the sugar from crystallising. But as you’re only briefly boiling the sugar that won’t be a problem.

      @@UKWILDCRAFTS So could you do without the lemons in a wine or champagne? I know you wouldn't get the fizz but could you still get alcohol? and what about maple sugar or a monkfruit sugar as an alternative?

    I have tasted this made in Slovenia and Austria but i didn't know it had to have sugar in it, Do you know if it will still taste ok if you dont use the sugar because i try to avoid sugar at all costs because i have read in lots of different books that sugar is the most easily absorbed energy fuel for pathogenic bacteria/fungus and cancer cells and even the naturally occurring sugars in fruits should only be eaten seasonally because the purpose is for it to spike insulin in the species that consume it to allow the body to store fat to get us through the barren winter months. Even Dave Asbury the longevity expert recommends to always avoid sugars plus there are the famous tests on lab rats and mice that are more addicted to sugar than cocaine 🤔

      It is worth to remember that majority of sweeteners are worst than sugar.

      @@matabobek Yeah thats true,,,,There used to be a common phrase in the 70s "if it tastes nice spit it out ", its difficult to escape sweet tasting foods these days :)

      There's a lot of misunderstanding and plain outright misinformation about sugars.
      The simple truth is that our digestive system has evolved from foraging, which is mostly nuts and fruits.
      Of course, too much of anything can have an adverse effect, but a few grammes of sugar a day are perfectly harmless for any healthy individual.

    Good simple recipe, great video, but it would have been good to know that there are inedible lookalikes to elderflower. This video inspired me to go out to pick elderflowers and make the cordial, but I only found out about the inedible lookalike after making the cordial. There is a chance I have unknowingly picked the wrong type of flower and put it into the cordial, probably making it harmful to consume. Luckily, I didn’t drink any of it after watching one of your other videos detailing the inedible lookalike to elderflower, but it would have been better to know about the inedible lookalike from this video. But overall, this is a nice recipe that’s incredibly easy to make.

    So here we have the lovely elder flower strange from earth then we add sugar which is extremely bad for health, so tasty it may be , sugar is killer

      Sugar is fine in moderation. If you’re only using a small amount of the cordial and diluting it there’s no problem. All shop bought cordials, sodas etc have even more sugar

    I think we might get better value out of the plant by putting lemons as flowers into warm or coldish water. By this we get not only taste but benefits of them herbs ...
