I love cucumber too & I eat it in salads & alone.
I like to slice them & add purple onion & tomato’s in apple cider vinegar water and granulated sweetner as a pickle. I am a type 2 diabetic.
I often eat English cucumbers sliced very thin and salted, then I’ll pat them dry to get all of the water out of them, then I take softened cream cheese and some mayonnaise, fresh dill and fresh minced garlic or powder, salt, and black pepper, mix that up really well and then I cut dark rye pumper nickel bread into small square or round sandwich slices spread the cream cheese mixture on both sides of the bread, then add the cucumber tomato & often I’ll also add very thinly sliced purple onion making a sandwich which is a tasty snack.

My favourite cucumber recipe:
Indian cucumber Raita. Finely sliced cucumber in whole yoghurt (no sugar) a little salt, black pepper and ground cumin. Eat chilled.
Greek tsatsiki:
Sliced cucumber dressed with lemon, olive oil and whole greek yoghurt (sugar- and sweetener-free!)salt, pepper, minced garlic and chopped fresh mint leaves.
Any one ingredient can be left out if preferred, except for the cucumber and yoghurt.
