Good job and she is slowly looking like a new pin. The overheating as you say could have been a stuck thermostat so great idea to replace that. Also, the sender unit maybe giving a false reading so again a good idea the change that too.
I am not sure about boat engines, but if it has some form of radiator then maybe over time they become clogged and need draining or flushing through.
The outside is looking much better and I was about to suggest using an electric sander but in the next caption you already had one. 😂

Hate to say but 9 time out of 10 it will be the heat exchanger....if the 2030 has rubber end caps it's fairly easy to access. Good to see another skint man like me... I have a 2022 Bonne Black tiger 800 and Najad 373.... you cant take money with you can you.
The wing nuts are an upgrade so it’s easy in a seaway to change the impeller
