I love how Pepin doesn't call it fond, but crystallization. He did this always in any old cooking shows from 20-30 years ago.

He really goes out of his way to distance himself from his French background and upbringing, with his insistance on being in Connecticut and all. Man wants to be an Américain

@@pianistajs and, of course, the irony is that he built everything on that French heritage.

What is fond? Another name for the process of crystallization? Never heard that before.

Pretty much; it's French for "bottom," so it refers to the sugars, proteins, and other affiliated stuff that cooks onto the bottom of the pan that you then deglaze.

Fondant. Foundation. Funny that Jacques went to the English. Crystallized. Sounds pretty. It’s something that happens because of the process of cooking. It’s more accurate I think in the process of cooking. Also known as glaze, so then you deglaze with wine, vinegar, water. Glaze connects better with crystallization than fondant. I think.
Anyway, 2 in the morning here. Last call. And good night.

Love these two but it is so strange that know nothing of fresh water fish except trout which is not so good compared to crappie, blue gill and white catfish.
