ROTI SKINS
4 cups all purpose flour
2 tsp baking powder
1 tsp salt
1tbsp brown sugar
1 1/2 cups warm water

I love the way she makes the roti. I am Jamaican so I make my curry chicken differently.
Little cumin added to the curry while frying. Some add water to the curry to before the meat, I don't. Way to much water in you chicken, way to early. Allow the chicken to fry up awhile, it makes it's own juices, giving additional flavor. Water later, with additional green seasoning and garlic in final 30mins simmering for gravy. I like very soft potatoes as well, channa separate for me. Roti looks great, don't understand the brown sugar!! Born in Grenada, grew up in T&T early years and make a mean curry. Folks boil curry powder and call it curry. Nice and slow produces flavor. More gravy man!!
I luv chicken curry ,roti I'm from SA Lenasia , I use oil onion first , ginger n garlic ,sum curry leave n somph seed ,cook oinin half way ,then add masala masala leave to cook fine den add a little water n chicken cook for 10 min n add salt potatoes n water

Hi! My mother is from Trinidad, and I love chicken and potato yellow curry (We use a Madras curry powder along with the cumin, bay leaves, etc., but we usually use one pot, browning the onions, garlic, tumeric, and other spices, the chicken a bit first then adding the potatoes. As you noted, it's a delicate ratio of water to stew because the potatoes will produce water, too. She taught me how to make it, but she didn't know how to make the roti skins. We are lucky enough to have a Trinidad themed restaurant about a half hour away. However, I wanted to learn how to make roti skins. Thank you for your great lesson!

I make roti also I use up to 5 or 6 layers but off course the pieces are smaller comes out fine I roll it out thinner.

Stir curry powder and turmeric in hot oil then add chicken stir well combine cover let the chicken release the juice.you can add water if you want.
Everyone cooks different the chicken add its own water and the chicken could’ve chop a little smaller

Some times depending on the chicken you do need water to help it cook, not every chicken will spring enough water to cook itself. American nasty chicken spring water, Caribbean chicken that is organic grown do not spring water.

What seasoning did you use with the garlic,thyme,and parsley to marinate chicken
"Green seasoning", a bottled seasoning mix of French and or Spanish thyme, chives/green onions, culantro, cilantro, celery, pimento peppers
marvellous upload (if you did brown the chicken it would have been succulent even without the gravy)

Every one cooks differently, and even at various times ,we will try something new,..For example,Some Times I will “fry The Curry,”as Demonstrated..And other Times I will seasoned the Chicken with the Curry ..and Put it The pot with Hot Oil.and lower the flame…then it will spring its own liquid/water/juice etc (c)..Other times just Curry the Chiken while Seasoning it..and just add the. Oil and just put it on the Stovetop….or in the Oven etc…(.d)..AND this May Surprise Many folk ,You don’t Even have to Use Oil or Butter in the pot ,You can just use A LITTLE WATER 💧,Yess a little water and,add your seasoned Meat ..And lowered the flame 🔥..It will be fine,Not many People Can Tolerate Oils etc..(1)..CURRY CHICKEN ETC CAN BE COOKED IN VARIOUS WAYS ,EVEN WITH COCONUT MILK AND EVEN WITH CURRY LEAVES….VARIOUS CURRY POWDER…EVERY ONE IS UNIQUE..AND TRYING AND EXPERIMENTING WITH FOOD ..LEARNING FROM EACH OTHER MAKES IT EXCITING..

Cooking the potatoes separate makes sense
It’s okay to cook the potatoes with the chicken after she browns the chicken in the hot curry sauce in the pan. The chicken will make its own gravy then add potatoes, carrots and stir in. Cooking all together will make the gravy thicker. Also add diced tomatoes for more flavor ect Too quick to add the water before meat was browned . Makes a nice gravy. The water dilutes the flavor of the curry and seasonings. Just a suggestion, everyone cooks curry differently. 🤷🏾♀️
