    Recipe notes
    (25cm x 25cm roll cake baking sheet)
    (A)
    3 egg yolks
    10g granulated sugar
    40g light brown sugar
    20g salad oil
    20ml milk
    (Meringue)
    3 egg whites
    30g granulated sugar
    10g cocoa powder
    (Chocolate cream)
    200ml fresh cream
    5g granulated sugar
    50g chocolate
    (1) Separate the eggs into yolks and whites.
    (2) Add (A) to the bowl of egg yolks and mix.
    (3) Add granulated sugar to the bowl of egg whites a little at a time and whisk to make a meringue.
    (4) Add a scoop of the meringue to (2) and mix.
    (5) Add all the ingredients to the remaining meringue and mix quickly.
    (6) Reserve some of the dough and put it in a cornet. (Plain dough).
    (7) Sift the cocoa powder into the batter and mix gently. (Cocoa dough)
    (8) Pour the cocoa batter into the baking pan and flatten it.
    (9) Squeeze the plain dough in the cornet into a dot pattern and trace with a bamboo skewer.
    (10)After flattening, bake in a preheated oven at 170℃ for 12 minutes.
    (11) Take out, remove from heat, peel off from the cookie sheet and cut off the edges.
    (12) Make the chocolate cream. Heat the chocolate and about 1 tablespoon of the cream within the amount in a microwave oven at 600W for 30 seconds.
    (13) Mix to a thick consistency and remove from heat.
    (14) Add granulated sugar to the cream and whip to about 5 minutes.
    (15) Spread the chocolate cream on the roll cake batter and spread it flat.
    (16) Wrap in saran wrap and refrigerate for 3 hours to set.
