Are, the reason for burning the wood is that the process of the heating the wood to extreme temperatures actually releases the natural oil's within the wood itself, causing a natural process that helps to seal the wood from diseases and rot . It's almost like pressure treatment but with the tree's own oil's etc. It's great to see you actually doing it the correct way as the most of the CZcams video's only burn the wood but never bother to brush away the charred bits, so the first time you put your hand upon it you end up covered in soot from the process. Do you have to finish the table with the rubio monocoat or is the burn enough to keep it protected by itself?

It's been standing outside for a month now, in both sun and rain. The table top is still pretty much perfect, but the legs have cracked a little bit. Nothing major, though.
Btw, did not use Shou Sugi Ban on the legs. Probably should have.
