  • Today I am making soft flour tortillas from scratch, using butter. This is gonna be good!

    You have asked for another substitute for lard or shortening and here it is. Soft Butter Flour Tortillas are just as delicious and just as soft. You can eat these all on their own or use them for tacos or chimichangas.

    INGREDIENTS
    3 cups all purpose flour (400 grams flour)
    2 tsp baking powder (7.5 grams baking powder)
    8 oz hot water (236.59 ml water )
    1/3 cup butter, lard or shortening (65 grams) *use only 1/4 cup (59 ml) if using oil
    1 tsp salt (5 grams salt)
    King Arthur Unbleached AP Flour

    TIPS FOR SOFT TORTILLAS
    *Be sure the dough is moist and tacky before kneading.
    *IF dough is too wet add flour one Tbsp at a time until workable
    *Be sure to knead for 5 to 10 minutes dough should be smooth and soft after kneading
    *Be sure to rest for at least 15 minutes to allow the gluten in the flour to relax which helps the tortilla to bubble while cooking
    *Try to roll out your tortilla thin
    *Over use of flour during the roll-out process may change the texture

    Some of my favorite memories are of walking into my grandmother's house on a Sunday afternoon, after church and the smell of hot, fresh tortillas would fill the house. Getting one straight off the comal and slathering it with butter💖💖💖

    I remember getting home from school to my mom making fresh tortillas, always a pan of refried beans nearby. Didn't matter if main dish was fried chicken or spaghetti..always had beans n tortillas. YUMMM! Thank you for reminding me.

      My mom never made these, matter of fact I never had a flour tortilla until I moved out but she always made pierogies,(mother is German, Italian and Sioux Indian) fresh breads and cakes. So I understand that smell of coming home from school :)

      omg same except my mom hated refried beans. We always had charro beans nearby ready to be dejuiced and thrown in her fresh tortillas with whatever leftovers we had (ive eaten leftover fried chicken in tortillas, leftover pork chops, leftover spaghetti sauce and meatballs without the noodles which is oddly good, even leftover broccoli and cheese and potatoes and cheese which was also very yum. Tortillas make leftovers better lol. I didnt even know we were poor till well into my late preteen years cause we ALWAYS ate like kings and queens in mamas house
      Anyone who grew up on tortillas and beand is good in my book. Im positive it builds character.

    Im in a county where Mexican food does not exist and I am dying for it!! I know if these people had a taste of it..it would be a hit!! But I'm so glad I found your channel. I can definitely make this and only some of the recipes because they don't have any Mexican ingredients so I would have to find substitutes. Gracias!!

    Thanks for the recipe. Perfect timing. It's raining today and I don't like driving in the rain. I'm out of tortillas. I have all the ingredients to make tortillas except shortening, I've never heard of using butter but going to try this recipe right now.

    I was my best friend's honorary sister. Her mom made the best tortillas that I've ever had. Her husband made a press for her and a big thin metal disc to cook them on. She measured her flour using her cupped hand & pinches of stuff😄 My friend resorted to grabbing her handful of flour & tipping it into a measuring cup to try to get a recipe from her😄 ❤ your channel!

    About 1994 I was in Mexico City working in Chapa-De pic and the foreman on the job spoke no English but he made us breakfast every morning and he would make tortillas on a piece of pipe 10in or 12 around it had a little fire going in the bottom of the pipe and then he would tap his hands together with the tortilla in it and then get it thin enough and put it on top of the pipe and then turn it when you got done on that side it was real neat and tasted awesome

      Amen ! Folks from other parts of the world use their discarded food cans to cook. Pots and pans are a rich mans thing. God bless and praise God we can cook with running water inside !

    I’m 23 years old and I’m trying to impress my husbands side of the family with cooking an amazing Easter dinner cuz my suegra makes the most delicious food every holiday. I honestly don’t know what to make for Easter but I know that carne asada can never go wrong after forty days of no meat. Could you post a video of how you marinate your carne asada?       I always make deviled eggs or a homemade creamy Mac and cheese.
      You can marinate carne asada with 1/2-1 can of beer
      Lime juice
      Garlic salt and light pepper

    Pardon my Texan, but HOLY $hit!! I am 41, live in Austin and I’ve always bought my tortillas from H‑E‑B or restaurants because they always got too dry when I tried to make. Your tip I tried today- about not adding flour! I made a batch with your recipe, but half butter and lard and no extra flour and they were delicious! Iced in today, and wanted tacos but had no tortillas till now! Thank you!

    Thank you for posting your GREAT videos and including your family recipes. I love that you are flexible and offer substitutes with measurement adjustments. I made the butter tortillas for the first time. I added the hot water in slowly and used a hand blender tool instead of my hands (I had hand surgery). They turned out great 👍🏼 ! Thank you again, you’re so talented.

    Hi, love your videos. I just made these and they came out great. I've tried making them in the past and they would come out dry and hard. I let them rest for a good while until I was ready to cook them. I used very minimal amount of flour to roll them out. Thank you so much. Your voice is warm and soothing. You stick to the topic at hand and don't divert into other areas. Keep up the good work.

      Absolutely, we had beans and tortillas, meat was a treat, I think back to those times and my kids will never know what real struggle or lack the will that we had growing up, I'm glad in a way that they are able be spoiled because I feel like we as people and Hispanics have taken a huge leap forward.

    I have been looking for someone like you to show me how to make flour tortillas for a very long time. I remember when I was a child helping my grandmother make flour tortillas. She only let me knead the balls of dough for her and not how to make the dough. They were to best thing I every ate. Thank you for your detailed instructions!

    My mom never had a recipe. She had a big metal can. She put all the ingredients in a small well in the center. Worked it around and a ball came out ! God bless our family members who cooked wit love ! From scratch!

      My mom never did either. When I'd ask her what she used she'd reply a little of this, and little of that. How do you make it? Just out it all together.
      As an adult she asks why I dont know how to cook. Loved her food as a kid.

    I made these tonight. Omg so easy, soft, and delicious. I used you advice and used what I had which was 1/2 butter & 1/2 bacon grease. I'm a Texan too and keep a mason jar in the fridge tightly done with a lid to keep other smells out. Oh my goodness your recipe is good. I have problems with my hands so I did the main mixing & kneading with my kitchen aid. Thank you for sharing. ❤ 🏡

    It's funny growing up on the family farm we made our own butter and that's how my great great grandmother made tortillas with butter 🤣. It wasn't until I moved to the city that I learned people use manteca (lard) for tortillas, and that's because I lived in both Mexico and the US and everyone I knew used butter. I'm the main reason I'm writing I love your resets that you're using. It takes me back to my childhood to seeing a moma cook and make tortillas ❤️

    Firstly, I want to thank you for sharing your recipe. I don't really like using too much lard in my cooking and I was already thinking about substituting with butter when I saw your original tortilla video. I also am grateful for that angle showing the tortillas rising as they cooked, at stove level 😍. And lastly, when you tore a piece off the cooked tortilla at the end, it just did some things to my taste buds. Oh my! ❤️

    I've never tried to make tortillas. My grandmother, & aunts did it, I never learned from them & always thought it was too labor intensive. This is so doable! I even have my husbands moms tortilla press. I'm so doing this later today. My son will be thrilled! TFS love all your videos! BTW...that is my DREAM stove! Maybe one day I will have a home with gas cooking ability! A girl can dream..

I have a few recipes of tortillas that I have made and saying in the recipe no hot water and mixing the dough till all gets together and cover the bowl and let it rest 1 hour and after must knead 20 minutes and resting the dough 30 minutes after kneading and after forming little balls and resting again 30 minutes and after rolling the dough till you can see through and resting again the dough 30 minutes....It's 3 hours to make and It's not cook !!! And another recipe I have tried its the dough you put in the refrigerator all night. The next day you knead for 10 minutes and rest 30 minutes. After, you roll in balls and roll the dough and cook but again its so long to make and the taste is good but your tortillas recipe is so good , even more so why put so much time ???? I have tried so much recipes of tortillas and you know I'm a bread maker for almost 40 years so , I know bread and in so much variety, forms and with all kinds of flour mix , with or without yeast or best is sour dough, bread recipes are infinity.....I'm a bread lover and your tortillas recipe for my liking is the best with a lot's of butter inside, that's the secret for any good recipes.( not only for bread !) that have that little taste of something more than other ecipes......it's BUTTER !!!🤗 You never put to much butter in any recipes you make believe ME, because the success of a recipe and the taste it's in the BUTTER !!! One thing you learn first in becoming a real and good cooking chef , there's 3 ingredients for making the best recipes of all ,and it's ; BUTTER WITH BUTTER AND BUTTER !!! VOILÀ !

    your recipes are SO accurate & good -- they always come out well. my tortillas were dry & tough until I found you; now I make great tortillas. thank you!!! BTW, I weighed out all the ingredients (because as you mentioned, measurement by weight works best for baking) and for me, 3 cups of White Wings all-purpose flour came out to 410 grams and the baking powder came out to 10 grams. another reason I love working by weight when baking is that you don't have to get a bunch of measuring cups and spoons dirty (okay, I can be a little lazy)! THANK YOU AGAIN!!!

      Thank you! You know somewhere on here someone commented that 3 cups to grams is 409 grams, so you are spot on. I think the biggest reason for my three cups being slightly less is because I really fluff and aerate the flour before scooping. I might just might retest it. Either way I'm so glad you tried the recipe. I appreciate you!🙏💖

    great recipe as always. but yeah, as much as i love cooking videos, the comment section/cooking community is sometimes pretty toxic because according to certain people apparently there is only "one right way" to do things. but i guess there will always be people who complain and are way too stuck in their ways. keep up the good work and keep experimenting!
    really want to make some tortillas now but dont know what i ll have with them yet lol.

      Growing up in San Antonio, when we were small kids, enchiladas were made with red corn tortillas. We moved to west texas and I when I ordered them they were made with yellow toritillas. Came back to S.A. and they are no more. So, it doesn’t matter what technique you use, as long as they taste like a tortilla!

      The complaints seem to go against G Mama's mantra of "use what you have." What I love about keeping a Mexican kitchen--I'm una chilena--is that you can always make something good regardless of the meats, veggies, aromatics, etc., that you have on hand. Butter? Why not?

    I used about 70grams of butter, and only 1 & 3/4tsp of baking powder as I'm sensitive to the taste. Can't wait to see how good they get with age and practice.

    Butter has always been a alternative when there was no lard now I’m hooked on butter tortillas my CUZZ done it for years I’ve done it on hard times ! there good n Ive never got a complaint! You make them just like me glad I found this video your not alone n nether am I when it comes to butter tortillas! Awesome 😎 video

    I love flour tortilla's, i live in Vegas and i used to make this everyday for the restaurant, now i am over Thailand and i introduce this kind of Mexican dough to my Father-in-law, from my amazement they love your recipe, i told them i just copy it from you, so i give you the credit for letting me work on it here to show them this recipe,. i make a variation of this tortilla to a burrito dough everything came out perfectly and made me a real enchilada sauce from dried peppers mixed em all up with cilantro oregano and cumin everything came out perfect,. thanks for sharing your video,..

    Hi, I found U and will try this recipe since we just love chicken enchilada casserole made in the crock pot with cut strips of tortillas. Baking in crock pot on high then to low for a total cook time of about 7 to 8 hrs. The tortillas become more so like the thick to 1/2 thin bread pieces and it soaks up the liquid, it is different then baking in the oven, we like to let sit a day to enquire flavor hehe kind of hard to do but we manage the time in quality tasting foods. Thanks Ur recipes are so good, we just love them and we live in the Philippines, from the Denver area, cant beat a good mexican chef!!!!

    I love your stove with the griddle, I've had a couple of electric stoves over my life time when I was younger but I would never go back, gas is the best! I will def. try this recipe as I don't do lard! Thx
