I have had the pleasure of seeing Russ McKay fillet a walleye first hand and he is faster then what you see on this video. I have also had the pleasure of spending many days on the water with him guiding me fishing for trophy Northern Pike, Walleye and Lake Trout. He is the best guide I have ever had the pleasure to fish with. He is a gentleman in every sense of the word.

I really like the handle on these knives as they feel good in my hand. I'm giving them 4 stars on look and feel, but have not had the chance to put them to the test yet. I mostly fish for catfish and can hopefully try them out in the next few days. If they hold an edge throughout a limit of catfish, they'll be worth another star.Update...I used the 9" strong and the 9" fillet on a mess of catfish. I did put a sharpening on these before I started. I want a razor edge to fillet fish but they weren't quite that sharp. The people who gave these knives crappy reviews and said they were sending them back was because they weren't razor sharp. So what, do they not have a knife sharpener?? Good grief! I mean you have to sharpen any knife from time to time.I personally like them and am pleased with them. If you're too lazy to sharpen a knife then hire someone to clean your fish lol.I've never bought a knife in my life that would shave hair right out of the box. Don't be afraid to purchase the knives. They're pretty nice in my opinion.
I use this technique on most species now especially perch. During the winter I may bring home as many as 50 from one outing and it really cuts down on cleaning time!
this method never worked for me when it comes to doing the second side,id always end up breaking off the head or spinal bone when trying to cut through the rib cage the second time and have nothing to hold on to when trying to get the second fillet off, specially when they are not jumbos they break easily
My dude threw away the cheeks, the friggin best part. And bud, you can zipper the spine and y bones with a few more seconds of time per fish. He might be the fastest but that don’t make em the best
Everybody knows how hard it is to get the stink of slime off your hands so why the heck do your flop your skinned fillet into the goop on the table? Its just as easy and certainly cleaner to lay a skinned fillet onto a clean plate.
Looks easier than it is..I almost wasted a fish trying to do it this way instead of the 'canadian method' that I always use (not cutting rib bones off with fillet) thought my knives were sharp..maybe not sharp enough :/
Chris C Could you not cut through the ribs, or did you have an issue tearing the ribs out? I find walleye over 5 or 6 pounds tend to have pretty big ribs, and tend to use the thick end of the knife to get through, rather than the tip or midsection. If its a tearing issue, try and keep a more horizontal cut when trimming out the ribs, and cut all the way to the end of the ribs, (following tightly horizontal on the underside). Should end up with just a thin strip of rib bones with very little meat on them. It should also be noted that the tearing, as it is unnecessary, is for speed purposes. This guy can deal with more walleye in a night, than most of us could eat in a year
