CRISPY CHICKEN AND CAESAR SALAD SANDWICH

  • This sandwich is divine. If you love a good Caesar salad will love this crispy creamy sandwich.
    This is how you’ll make it.
    You will need 3 good chicken breasts, when pounded thinly you’ll end up with 6 good pieces.
    For the breading:
    3 cups Italian seasoned panko crumbs
    4 large eggs
    1 cup of flour/ season lightly with salt and pepper
    For the dressing:
    3/4 cup mayonnaise
    2 whole heads of roasted garlic
    1/4 cup olive oil
    Salt and pepper to taste
    1 tbsp champagne or red wine vinegar
    1 tbsp Dijon mustard
    1/2 tbsp Worcestershire sauce
    The juice of 1/2 lemon
    1/2 cup Parmesan cheese
    You will also need ciabatta bread, more Parmesan cheese. And 3/ romaine heart lettuce.
    Olive oil and butter to pan fry the Chicken. You can choose to pan fry in canola oil if you prefer.
    Preparation:
    First thing you’re gonna do is roast two whole heads of garlic, simply wrap in foil and place in 375 degree F oven for 30 minutes or until soft inside.
    Place the each chicken breast inside a ziplock plastic bag and pound gently until thin and has even thickness on all sides.
    Prepare the chicken coating by placing in different shallow plates, just make sure to season the flour lightly.
    Dip the chicken in the flour then eggs then the panko and coat well. Cook in a skillet as shown for 5 minutes on each side. Make sure to clean the skillet in between.
    Make the dressing by adding the roasted garlic mayonnaise, salt and pepper and the rest of the ingredients. Drizzle the oil towards the end and taste to adjust.
