    A great way to cook a whole Branzino. So flaky and flavorful.
    Ingredients:
    1 stick of butter
    Cloves of garlic smashed
    1/2 jalapeno diced finely
    2 tbsp finely chopped parsley
    1 tbsp red pepper
    1 to 1 1/2 pounds of whole branzino
    Salt to taste
    Lemon slices
    Marcona almonds to serve .
    Preparation:
    First thing you need to do is make the compound butter. Mix the soft Butter and the rest of ingredients well then form a log and refrigerate until it hardens. You will need to clean the fish, dry well. Place the fish in top of of parchment and foil for easy clean up. Make slits on both sides of the fish.
    Slice the cold compound butter and add 3 slices inside the fish and 2-3 slices on the outside. Top with 3 slices of lemons and seal the fish well with the parchment lined foil.
    Place in a hot grill covered for 15-20 minutes or in the oven at 400 degrees F for 25-20 minutes. You will be able to tell when the fish is ready. When you poke it with a fork it’s soft inside. Don’t overcook for maximum flavor and flakiness.
