I was never a big fan of butterflied loin steaks but I have done the bacon wrap and that is excellent!! Good video!! I hang my deer by the hind legs is there a specific reason y'all hang by the neck?

Appreciate the content and practical portion of videos. Have you or other members of your family tried other spices on deer meat and what were the results. I have used a 50/50 marinade of soy and Worcestershire sauce with good results.. one hour prior to cooking. The high salt content I think tenderizes it some.

That is a good question right now. Sadly the central U.P. (Upper Michigan) where our camp is has gotten over 3 feet of snow. We have assessed the camp road and there is no way we can drive in. The road is pretty rough without snow, so plowing is a risky idea too. The other issue with that much snow is the deer will migrate out anyways. We are still debating our options. All of us that hunt at the camp have other hunting options, so it's not like we won't be hunting. I think we are going to hunt our different areas other than the camp for the first part of the season. Then we may snowmobile in around Thanksgiving. We do need to get to the camp as we have water and beer in the camp that will freeze and make a mess. We need to drain our sauna or the stove will crack and we have a battery bank that we don't leave out their too. Whatever we do I'm sure I'll have some videos about it. I usually take a whole backstrap and wrap the whole thing in bacon. Then, low-n-slow on the grill until the bacon is crispy. I told my big brother about how good this is. My big bro' is a former Marine. He simply said, "You can wrap an old, dried dog turd in bacon and grill it. It would taste good." No thanks, bro'. Knock ya self out. And I'm an Army vet. I didn't go into the Marine Corps because I suck at pull ups.
Like your videos but, backstraps are NOT tenderloins. They are loins. The new york strip of venison. The tenderloins are smaller and located inside the animal against the backbone, opposite the loin. The 2 are different. This is a common misidentifcation.
Mel, you are totally right. My Dad actually mentions this at the 6:20 mark on this video, but I should have worded it different as to not add to the confusion. I will actually change the title. KPO

Mr D is a great butcher, no doubt what-so-ever. But why, why, whyyyyy do all professional meat cutters slam the meat in the table ?
Speed and it plants the meat firmly before cutting. And it looks cool.

It's true though, you really can't go wrong adding bacon to anything. I'll skip the dog turd too, but if you had to eat one, bacon would help!
