    In Kyoto, there's a chiffon cake called "Coconotane" that sells out within 2 hours of being baked.
    Surprisingly, its main ingredient in the original recipe is rice flour.
    The owner generously shared the recipe online, so of course, I had to give it a try. I think this recipe might use a bit less rice flour than expected.
    When freshly baked, it doesn't have the spongy texture like a traditional sponge cake. It's airy, soft, and incredibly elastic.
    For a 6-inch chiffon cake mold, here are the ingredients:
    3 eggs
    45ml milk
    1/4 teaspoon white vinegar
    45g sugar
    6g matcha powder
    55g white rice flour
    37g vegetable oil
