- Here at our farm we grow most of our own food, including making our own bacon. We raise and process the hogs ourselves, slice out the pork belly, trim it up, apply a mixture of 2 parts salt, 1 part pepper, and 3 parts brown sugar, wrap it in butcher paper, let it sit for 10-14 days, wash, smoke to an internal temp of 150 degrees, allow to cool overnight in the refrigerator, slice with a knife or slicer, vacuum seal and enjoy your homemade bacon for the upcoming year! Once you try this its hard to go back to that store bought stuff!

I am going to try to do the bacon I want to start with that first cuz it's smaller than a ham. But I don't have a smoker I was just going to hang it like you do the hams
When I was a kid in rural California, my Grand Dad raised hogs every year. Due to our location, he would go around 2 or 3 times a week and collect all the produce from the many fruit stands in the area that was to ripe, or they couldn't sell. This is what he fed his hogs. Man oh man, that was the best tasting pork I have ever had...no kidding. Mom, Dad and us kids left California when I was 10 years old, and I haven't been back since. That was over 60 years ago and I pretty sure the California that I remember no longer exists. A tip from an old timer...home grown/made ANYTHING is far superior than store bought ANYTHING.
Rural California is the same. The big California cities are what u see in the news. I live near all the fruit farms

Like a trip down memory lane. My grandparents lived on a farm and made their own German sausage, bacon, eggs from their chickens . Also my grandma use to own a bakery. My family are from Pitt county North Carolina. Been there since the 1550's .I am from the Pennsylvania ,born and raised . I lived there when I was in my late teens and early 20s . I loved it but not the weather , to hot for me , I like the snow and deep cold. I heard stories from my grand mother and others how they grew everything including tobacco. I always wanted to work the land . I have a natural ability to do it. Now that I am 56 and I'll in health those days are gone . But it's nice to see others doing something that is becoming a lost art in farming and surviving off the land . Makes one appreciate what they have more .

That's the best looking bacon I've seen in a long time. That's the best way to reuse an old pack house as a smoke house rather than to store junk in.

It’s taken my wife a little while to adjust to cooking fresh bacon versus store bought bacon. It’s amazing how much faster the fresh cooks and definitely tastes better

Speaking of crispy bacon, my grandson when he was younger he would tell me he wanted his bacon “wet”, meaning not extra crispy, just done. Just like my son and I always wanted the inside biscuits, my husband and daughter liked the biscuits that were next to the pan, with crusty sides.

I myself was a pitmaster at 1 point in my life and if you do 10 part pepper to 1 part salt you don’t have to wash it off the pepper makes it delicious

I buy my pork bellies in town, as I live in the city. Bring them home and do the same thing. I have a couple of smokers and smoke them just like you. Way back when I bought a meat slicer and slice it up and then seal the meat. Better than store bought. Great video's and thank you for showing the process.

Raised our first hogs last year. This morning we ate our first batch of bacon from them. It was so good.
Used a similar method. Rubbed it in salt, brown sugar and pepper. Dat in our spare fridge for a week.

Yes, real good. I think you kids got it. We make a lot of maple sugar, does real good in sausage and bacon. You can use it in hams , but we have a tendency to can a large part of whatever we are butchering. Thought I would chat with you a bit, have a good day.

We cook our bacon on 350 in the oven on a cookie pan with edges. It gets crispy more than the pan. I see the grease to fry turnip greens. My favorite smoke wood on pork belly is cherry

you can make bacon less salty if it comes out that way by immersing it in water. Let it sit for a while, then remove and pat dry

My dad who has since passed away tickled me the last time I took him some fresh smoke house bacon we processed. When my mom started frying it up in the kitchen . Glad we could help! Like I said when we first started we tried several ways and washing first was by far the best and once we let it sit for 3 weeks and it was wayyy to salty even after it was washed

Hey, I love watching your videos, some Beautiful pieces of Bacon! I see ya'll frying it in the black iron? A friend turned me on to the way his old German mother did it ! She actually used her slotted flat Broiler pan! Comes out perfectly straight, and the pan collects all the bacon grease, to save for later?
When I was on the farm we smoked our bacon and hams in our walk in smoke house for at least 7 days and nights. We cold smoked it at around 130 degrees. We had a wood burning stove my dad made that would hold up to 5 pieces of hardwood that would last 10 to 12 hours before you had to add wood .
The stove was 20 feet from the smoke house on the down hill side so the stove was two or three feet lower then the floor of the smoke house ,the stove pipe was buried in the ground and came up in the center of the floor we had a metal drum covering the end of the stove pipe with holes in it on all sides to diffuse the smoke. People would order my dad's hams for Christmas 6 months before the holiday to make sure they would get one.
We used a lot of cherry and vine maple in the smoker.
My dad has been gone for over 20 years and I still have people tell me he smoked the best hams and bacon they ever ate.

Put parchment paper on a baking sheet.. line up the slices and put it in the oven at 350 degrees for 20 mins… take it out, flip the strips then back in the oven til it gets done how you like it… You can do a couple trays at once… easy peasy…

I do it with the same ingredients but I use cure and put it in a 2 gallon zip lock bag and turn it everyday. I only leave it for four to five days otherwise it is too salty.

If you let it hang over night after rinsing it off it will have the smoke "stick" to it better. Have you tried a cold triple smoke so it doesn't need refrigeration?
