    The sand distributes the heat very evenly (compared to a naked gas flame) just like the copper does but it must take some experience to get the right temperature by burrying the cup deeper or shallower. Plus it's a nice ritual to look at or perform as opposed to pushing a button.

      yeah, and it's very easy to control temp when you have multiple pots laying around, simply bury them higher or lower

    A while ago a lady invited my friends and I for some Turkish coffee. She brought out her beautiful equipment and handed us the best coffee I have every tried. That was 16 years ago, and I still think about her when I come across this incredible drink. If you haven't tried, you owe it to yourself to do so.

    They really nice and traditional way it needs to take an action for almost 5 7 or even 10 min. If u are using very warm water u are cutting down this time and u does not allowed to the coffee to rise up slowly and cooked slowly. Using hot sand is nice as a technique but u need to allow to coffee to cooked slowly this can takes 10 min

    My Papou brought a coffee pot with him from Lesvos in 1920. It has top and bottom part with cheesecloth as the filter. do you know how to use this kind? At the end you turn over the pot and the water goes down through the coffee ground or powder with cheesecloth to the bottom,

    Heat distribution is excellent in hot sand compared to flame or hot plate. Just placing the copper mug half-burried is enough. Continuous stirring of copper mug in hot sand wears out copper from the mug, and it doesn't provide any additional advantage over simply placing it half-burried in the hot sand initially.

    I'm from Turkey and has been drinking Turkish coffee since childhood. This is a new fashion, that hot sand thing. The original way to brew it is on a stove. That brewing way looks odd, too.

    How deep is that sand pit? It kind of looks like he’s just getting really close to the base of it and that could very well help increase the temperature. Just as easy as a stove.

      Yeah this method is mainly for show, not necessarily bad if the proper care and attention is taken, but very often the sand method results in overheated, over-extracted coffee. The argument that the sand "evenly distributed the heat" is pretty much a moot point, as quick and even heat distribution is why the cezve pot is made from copper and silver (or tin) and the specific shape of the pot also promotes even brewing. It is quite typical when making Turkish coffee "traditionally" to have quite a bitter taste and is why a lot of people add a lot of sugar to the coffee, to combat the bitterness. Look up a guy called Turgay Yizildi (not 100% on the last name but Tlif you search Turgay and Turkish coffee you will find him) - he is one of the main proponents of "specialty" Turkish coffee and his method (and others similar) will make far superior coffee on a gas burner than the sand method. It does look cool though and got a street vendor its a great choice to sell to tourists or for locals who just want a basic cup of Joe and be on their way. But for those with a more discerning taste, follow Turgay's method and you will get an incredible tasting specialty grade coffee 😊

    So let me get this straight... you just ground coffee without filtering it and just drink out of it with coffee ground at all. Secondly, you boil the coffee over boiling temperature burning it.... Tradition doesn't make things great. It's just how it's has been with flaws. It is not divine instructions from god. It's a bitter burnt coffee at the end of the day. Some may like it. But I don't.
