I feel like the Aluminum extrusions were an overkill. They’re too expensive for just structural integrity of a table leg, when they are designed for precision and strength.

Great question! For this application we used a pivot bracket assembly with an "L" style handle. Similar to the one seen here; 8020.net/shop/4348-black.html
