Technically, you don't really have to speak Chinese to communicate with the locals. Majority of the people can speak English since it used to be a British colony years ago.
The cheap stuff, like joints and tendon, can be used to make stocks and soups at home :) HK is truly one of the great food cities of the world. I love the fresh juice stands they have everywhere. Did you check out the Indian food in Chunking Mansions yet?

its illegal in hong kong and the civilized part in china, there is only 1 a state in china that practice this ''crazy'' eating habit, if you ask people from hong kong/taiwan/shang hai they were as disgusted as us

Whenever I go to Hong Kong, I must go to North Point market 北角春秧街. I find all the good food I need there.
Its Chun Yeung Street at North Point district.
A lot of the food you can get at most ranch 99s in America. That's why I prefer mainland food more, cuz they're harder to find in the states.
