olive oil breaks down at a temp lower than beef fat - ergo, you burn the oil into distasteful bitterness way before you can brown the beef fat. try avocado oil, very high breadown point on more neutral in flavor than olive oil. Also, start with ghee (clarified butter) instead of whole butter, develops crust lots better. last one minute - then add whole butter for the flavor.

If a rib-eye is too expensive , wait till "rib steaks" go on sale , usually around 5 bucks per pound here in Denver , they are exactly the same cut of meat but come with the bone (rib eye is the same cut but boneless) , then after your done feasting on your rib steak you get to demolish the bone portion that still has some sweet tasting meat ....your stomach will thank you. Provecho!!

When you're using that much olive oil in the pan, you don't even need to pre-baste with oil. They'll get a more than full coating just by placing them in the pan. Fresh garlic is a good call, and really a game-changer in terms of bombastic flavor. Crushed or finely chopped garlic can take things to the next level, and GARLIC POWDER is also a must.

What I personally like to do once they're finished cooking is to let them rest for a few minutes in foil wrap, then pour some red wine into the pan to deglaze and simmer down to a nice, flavorful sauce to top your steak.
Also, the added benefit of layering your steaks with a little oil first before adding the seasoning is, it helps the salt/pepper/other seasons to *stick* to the meat as well.
Love your video :D it is really nice to be able to not have to pay $27 at a restaurant and enjoy your own steak anytime you like
