Let's explore how to make cotton candy or fairy floss around the world. In Korea it is called dragons beard candy and it is made by pulling candy by hand into fine strands like hair. In Persia it has a nutty flavour from sesame seeds and is called pashmak. In Australia the USA and the UK it is made by spinning flavoured sugar using a cotton candy machine. Today I will show you how to make all three, they are heaps of fun to make at home.

@@sunsundks3891 Except that the fails are usually quite subtle and easy to do by accident. When teaching it is ALWAYS worthwhile to point out the easy errors rather than having the students find them on their own.

The first candy is almost like the Indian sweet SOAN PAPDI...... The only difference is that instead if sesame paste gram flour paste is used...😋

No, actually this is from an actual Iranian it means “Cotton Candy” in farsi believe it or not.
Well, pashm does mean wool but the word “pashmak” stands for cotton candy, not little wool. If it did it would be between the lines of “pashm-kochik” or “pashm-kocholo” somewhere like them.

I was so pleasantly surprised to see the pashmak recipe and how closely it resembled an indian sweet we have called soan papdi. we use a chickpea paste with lots of sugar, while the rest of the process remains the same. great fun!
Does anyone else remember the 'Fruit Pie' mixture Ann stored in the jar to see if it will last 3-4 months like the 200 y/o cook book said it would? Because tomorrow it would be 4 months since that video was posted and she can open it (even though it was probably thrown away in the first 7 days😂.) Lets see if she see's this!

Alice Xanthakos That doesn't seem like that bizarre anyways. People grow their own produce, and then can them (even though they're normally put in Mason jars, but it's called canning) so it lasts all year. I wouldn't be surprised if it was still good. People have been canning things for thousands of years.

*this is off the worlds record Coldest Countries Recorded Temperatures* Russia with number one record at −67.8 °C (−90.0 °F). Sooo cold.
Coldest over all average is Svalbard and Jan Mayen. Australia doesn't even make the list.
The coldest ever recorded for Australia is −23.0 °C (−9.4 °F) 29 June 1994, with average winters of 15 °C (59 °F). Their coldest record was probably the average for my home town last year and that was a warm winter for us! (It was so weird I was waiting for the other shoe to drop by the end of January and all of February) It's normal for us to get at least one night during winter at -32°C (-25°F) and usually -26°C (-15°F) for avarage in January! Though I know it feels really cold to them becuase they have really hot summers, but still! Please don't complain till you've at least been somewhere it's -29°C (-20°F)! Though I would recomend avoiding any colder temps when its even a little windy, as in don't leave the house if you can😨. LOL ( We live on a small farm so we have to go out a couple times a day no matter how cold becuase we need to check on animals. T.T doesn't matter how your bundle up the wind shears right through you😅) I have a hard time imagining living anywhere colder. No idea how they do it.😫

As much as I love fairy floss, I'm more biased toward pashmak for nostalgic reasons. Being from a Middle Eastern background, I ate this a lot with my family growing up. Besides, what's not fun about eating hair?

But it isn't dragon's beard. There's no sesame in dragon's beard.

This confection was invented in India and is made from chickpea flour (besan), wheat flour (maida), clarified butter (ghee), milk, and sugar. It is seasoned with cardamon and topped with a few slices or slivers of pistachios, almonds, and/or melon seeds.
We can all agree, the world around, that pulled sugar is delicious! Many countries "invented" it independently, each adding their favorite seasonings and flours. Long live thin strands of sugary goodness!

I miss dragon's beard candy, there used to be this man who makes it in manhatten, ny, but he cloosed down since he was you know old, and since then i haven't eaten a traditional dragon's beard candy. :(

The Pashmak is actually called, in popular turkish "Pi-sh-ma-ni-ye", that's a long word so I guess that's how you say that in english. I used to eat it SO MUCH as a child (I'm originally from turkey, now living in israel) everytime someone brought it back with it. The process was really fun to watch because as an 8 years old I always described it as "cotton candy that someone sprinkled tahini (the paste with the sesame seed) on it."
I think paşmaniye is slightly different from pashmak, which is the Persian version.
Watching this while eating authentic Iranian pashmak. Currently also running out of pashmak 😭😭 #disaster

In Indonesia we had the same delicacy like pashmak. Here we call it "Granny's Hair" because the colour is white (nowadays they coloured it pink to attracts children). Weird name, right? 😂

Pashmak: we use hot sand not rice - lots of oil in pan; little salt and sugar to finish before stir for bite. Use milk not oil when brush pan and pour all over whole stir

Thank you for the "trial and error" runs of the first two items. For the dragons beard, i saw a "Master Crafter" put the whole lot into a microwave for 3 seconds after every 4-5 pull/loop cycles. That allowed for an even greater number of strands(64,000). But your advice on maintaining a warm dipping flour is very helpful.

This dessert is very similar to an Indian dessert called "Sohan Papri" which is my favorite. If you find it anywhere you should try it Ann. It's delicious.

Back home in India, we have two things similar to this! One is Soan Papdi, basically melt in the mouth cotton candy, and other is Sutarfeni, primarily found in Maharashtra (as far as I know) and Sutarfeni is exactlyyyy like dragon's beard!!!!

I also always appreciate how you show the hang ups you had on the way so we can really learn! I got dragon's beard from Koreatown in Tokyo (Shinokubo) and watching the guy pull it was so cool! Usually they also wrap different fillings in it and sprinkle nuts or sesame seeds on top too. Really yummy!
