  • Pickled herring Bismarck - recipe for pickling herring, a unique and historical recipe for cooking in two marinades. You will get soft, tender and almost non-sour herring worthy of the name of Bismarck. Who personally, it is claimed, bestowed his name on this recipe. Often herring Bismarck is mistakenly called herring in a sauce of sour cream and apples. The recipe for which we will also give - because this sauce is made on the basis of Bismarck herring, and which is a true classic of northern Germany.
    Recipe timings:

    Ingredients:
    2 pcs of fresh or freshly frozen herring
    For the first marinade:
    250 ml of 5% white vinegar
    250 ml water
    12 teaspoons of salt
    For the second marinade:
    250 ml water
    6 teaspoons sugar
    3 teaspoons salt
    2 bay leaves
    3 juniper balls (optional)
    12 peppercorns of black pepper
    3 peas of allspice
    2 teaspoons mustard seeds
    250 ml white wine
    3 onions
    For the dressing:
    - 2 gherkins
    - 2 small onions
    - 1 apple
    - 1 tablespoon of lemon juice
    - 150 g sour cream
    - 100 g mayonnaise
    - 2 tablespoons freshly grated horseradish (optional)
    - 2 tbsp. white wine vinegar
    - 3-4 tablespoons of sunflower oil
    - salt
    - ground black pepper
    - 1 bunch of dill
    Calorie content of herring Bismarck - 262 kCal/100 g (Nutrients: Protein 14.2 g, Fats 18 g, Carbohydrates 9.6 g)
    Calorie content of herring with apple and sour cream dressing - 249 kCal/100 g (Nutrients: Protein 5.8 g, Fats 22 g, Carbohydrates 6.5 g).
