Ingredients -
Dressing-
100ml (1/3 Cup +1 Tbsp) - Fish Sauce
125ml (1/2 Cup) - Water
100g (3.53oz) - Granulated Sugar
6 - Kaffir Lime Leaves
15g (0.53oz) - Ginger, Chopped
2 - Garlic Cloves, Crushed
Chicken & Salad -
1 - White Onion, Thinly Sliced
2 - Medium Carrots, Julliened
150g (5.29oz) - Mung Beans
80ml (1/3 Cup) - Rice Wine Vinegar
20g (0.71oz) - Sugar
300g (10.58oz) - White Cabbage, Chiffonade
300g (10.58oz) - Red Cabbage, Chiffonade
25g (0.88oz) - Mint Leaves
25g (0.88oz) - Coriander (Cilantro)
3 - Chicken Breast, Sliced & Torn
1 - Lime, Cut Into Wedges
Chilli (Optional)
100g (3.53oz) - Peanuts, Chopped & Toasted
Seasoning To Taste
Notes -
Peanuts, lime and chilli are optional.
Unfortunately, the fish sauce is a key ingredient in this dish and can't be substituted. Other dressings such as vinaigrette can be used.
If you can't consume alcohol, rice wine vinegar can be substituted for regular white vinegar.

For the fish sauce, you can option to just skip the hassle and buy some bottled Nouc mam. A great alternative to stinking up your kitchen with boiling fish sauce and certainly quicker!

This is one of my all time favourite dishes when I go to Vietnamese restaurants. The fish sauce dressing is key. For those who are scared of it tasting too fishy, trust me as someone who doesn’t like seafood you cannot taste the fishy-ness because of the other ingredients sugar, vinegar etc. it’s actually really sweet and refreshing
Ah, but you can taste it. I've tried several vietnamese type salads and its always there, lingering 🤢

My local supermarkets do not offer lime leaves. Do you have an alternative for this ingredient? Looks like a great meal prep to try!
A fresh squeeze of lime juice once it’s cooled down will do the trick 🙏
I often just zest my lime it works good as well.
Would you happen to know if this would be okay to carry in my backpack to college, where it would sit at room temperature for a few hours?
I wouldn’t
If everything is cooked and cold when you put it all together it should be fine to sit at room temp for a few hours, people take packed lunch all the time they take their meal prepped weekly food put it in the fridge and take out the daily portion to have at lunch,
If it smells bad or looks bad don't eat it otherwise eat ur lunch and enjoy
Should be fine but if you're really worried, get a lunch box with an ice pack which will keep it cool until you can eat it.
How do you eat all of this food before it goes off? I get overwhelmed when I have a couple of portions of leftovers to use up!
It all goes in one day. I don’t meal prep personally. These are my dinners

Read that the fish sauce is key so unfortunately I won't be making this one chef as it creeps me out, shame as looks fab. One question please, is it really ok to put hot liquid into a fridge to cool, would it not alter the temperature and become a risk to other stuff in there?
You can make it with a vinaigrette. If you have a high powered fridge it’s completely fine to place in the fridge whilst hot. Fair enough if it was litres of liquid but as it’s only about a cups worth it won’t affect anything
Then I shall make it with vinaigrette, thank you.
Fish sauce if a fantastic addition to so many dishes. Try it please! Once you get paste you creeps you’ll discover you’ve been missing something special.

I often use sprouts instead of mung beans. Like radish or broccoli sprouts.

It’s such a small amount that it would do absolutely nothing to anything else in the fridge.

Could you be more specific about how much chicken you used? 3 chicken breasts doesnt realy tell me how much to get.
A teeny bit less than four and a tiny bit more than two. There, now you know. 😁
Roughly 800g but 3 chicken breast is the perfect amount. Most chickens are the same size unless they’re pumped with steroids which you don’t want to eat anyway

Bean sprouts are the most pointless veggie. It’s not that I don’t like the taste, as they don’t have any, just filler if you ask me
They add a very enjoyable crunch.
They do add great texture. You can leave them out
