    When the single mode fiber cable is installed, it isn't perfectly straight, so wouldn't the light bounce all the way down the cable?

      Yes but its only one signal on one path.

    you said fiber optics are easy to monitor because of the noticeable drop of signal and yet on your note you said its very difficult to monitor or tap???

      It's easy to monitor (manage) fiber installations because it's easy to find signal problems. It's difficult to monitor (analyze) data that's going across a fiber connection because of the complexities associated with tapping the connection.
