    As a norwegian I can confirm that this dish will taste like brown cheese, with a small hit of whatever else he put in there. Brown cheese is so 'powerful' that it would overwhelm any other flavours.

      Depends on the cheese though. If that is fløtemysost it really won't be that overwhelming. If it's the round brown goats cheese that is strong as Schwarzenegger then it will only taste of it.

    I'll always be impressed by how he just reaches into a hot pan with his bare fingers and touches the blistering hot food. My brother's in the food industry and he's developed that tolerance for heat as well, having been able to work continuously with fresh burns from hot oil. Mad respect to everyone in this line of work.

      Wearing gloves destroys that tolerance.
      I can literally pick fried chicken out of the oil but after wearing gloves 10 hours a day for a week I get baby skin.
      Thats why I work with insulation without gloves 😆

      You dont put fuckin Brunost "Brown cheese" in an omelett! You Just dont do it! The taste doesent fit! Im a Northman, ive put bacon in omelett, ham, different veggies, i made an omelett pancake! Ive made a Spicey Omelett with wheat bacon bits ham cheese and Veggies of different kinds, even added Grass Onion, making it into a small omelett cake of deliciousness! But you dont put Brown fucking cheese in an omelett!
      Id highly recommend Fenalår at the side with of an omelett though.

    I’m Norwegian and my dad just brought me a block of brown cheese for Christmas ( i live in Central Europe now). I am definitely DEFINITELY going to try this with a wild/gamey sausage down here, as there is no reindeer meat. Thanks for the ideas and for the cool videos and the new way of thinking, Gordon!!!!       .. As a Norwgian I have to say I reacted to the way the brown cheese was used. While its brilliant in brown sauces or stews for wild game+ .. its usually eaten on bread (and sometimes waffles).. using it as one would white cheese is a bit.. brown cheese is sweet and quite different tasting for one and you can't think of it as one would a normal white cheese. ..     Huge thanks again, Gordon! It's a bliss to tap in on your skills and creativity. I always spend July and August up in Lofoten and will definitely make this omelette. After seeing this episode, I kick myself for not having used the brown cheese very much in cooking. The only hot preparation I've done so far was mixing the brown cheese with hot chocolate, by dipping a slice of toasted rye bread with butter and brown cheese into the hot chocolate.

    Thank phuk! We get the brown cheese on the Norwegian vessels I work on, all the time. Most of the UK guys hate it. I love it. I thought it tasted a bit like caramel, and now I know why. Thank you Gordon. I was starting to think that I can't be the only one to like this cheese. Tastes great on waffles with blueberry or lingonberry jam. Cream is optional.

      @@phodacbitch Norwegian brown cheese has a sweet and slightly sour caramel creamy flavor. It’s usually eaten with jam or on waffles. It does not taste like cheese one would usually eat with omelettes/salty dishes. If you didn’t know it was cheese, you wouldn’t be able to guess that it is.

    Haaah, I never even considered using brown cheese on omelette before, heck even using it while cooking food like this.
    This opens up so many new opportunities for new taste tests.
    Also as a proud Norwegian, I'm glad you actually used our cheese slicer. But let's be real here, the brown cheese is so porous when cutting that you need the proper tool for the job.
    Also please help spread word of the delicious meat that raindeer truly is, so full of even Omega-3, and a slow cooked raindeer tenderloin with a mushroom and cream sauce made with the drippings from when you first brown the meat... delicious, and I can feel the water filling my mouth right now just from the thought of it.

      Last summer I went to Norway and as I was in the supermarket right before the cheese, some really nice local person recommended that Guldbrandsdalen which Gordon seems to use in this video to me. I tried it on an omelette with some collected mushrooms. That was such an amazing feast :D. I really like the light sweetness and the creaminess of this cheese^^ Greetings to Norway :D

    Ive never tried brown chees in an omelette before. have to try that. I can recommend mixing honey and brown cheese. i havent seen others do that, but I found the mix to be great when I was a kid and experimenting with all types of food in our fridge. Hade some strange toasts. :p I usually have it on toast or on waffles.
    I am sure gordon is aware, but we also use brown cheese in our brown sauces (for meat, especially game) . Just a little at the end, and mix it in.

    Putting a tiny bit of brown cheese in the egg paty is probably good with all the mushrooms and reindeer sausages :)
    But I think he went quite a bit overboard.
    I LOVE brown cheese! On freshly toasted bred with somejam on top is fantastic!
    And I also use Brown cheese in my brown sauce for example to meatballs, porkchops etc

      And what I meant to point out by that, is that it is not something most Norwegians eat. Also, putting brown cheese in an omelette is far from traditional, to the point where I've never even heard of anyone doing that. Not to mention it is a very heavy taste that will overwhelm the other tastes, so it's insane how much of it Gordon put on.
      People often see videos like this and immediately assume this is everyday life food for a Norwegian, if they haven't been here themselves.

    I suppose I don't know a great deal about traditional Norwegian food, but never in my life have I ever heard of using brown cheese like "normal cheese" - that be in/on an omelette, pizza, on top of pasta.. or wherever else you'd have cheese. Never. And yes, I'm Norwegian too. But I live quite south in Norway so if it's common to have along with elk and lutefisk, I wouldn't know as I do not have much of either. Love elk meat, but don't have it often, and never even tried lutefisk and that's quite alright with me xD

    2:13 "spicy merguez"...I lived in France, I really miss Merguez sausages. It's usually beef with aromatic spices. If you ever go to France and are walking home 'worse for wear' after a night out: you have to try a "Sandwich au Merguez Frites avec Sauce Blanche et Harrisa" (Merguez n' Fries in a Baguette w/ Harrisa).

    I just want to mention, if you want to try some dishes norwegian in origin or traditional norwegian food, be prepared for a lot of fat, because Norway was very cold with very little posebility for nutricius greens or a big harvest, so the food consisted of whatever you chould find and make shure it contained as much fat as posible to have as much energy as posible

    the brown cheese is called brunost, when asked about the , you'll typically hear one say that it's sweet and caramely. Depending on the milk used , cow, goat or a combination the two - the creamy, fragrant can also have a nutty or tangy taste.
