She didn’t see it and all she heard from him was “take care.” Maybe talking over the phone where the other person can’t see him is a metaphor for how he kept his feelings inside, not fully showing them to her. As the audience we can see it but it’s hidden from her. Maybe that’s also why he chose to call her and not go see her.

i think it was because she caught a glimpse of what he was like underneath, violence and cruelty wasn't his personality, it was clearly a defence mechanism, so she felt that if he just mustered up the courage he could get over that. and she KNOWS he loves her back but he just won't admit it and i'm sure that was incredibly frustrating. it doesn't help that women tend to have an innate urge to nurture, she wanted to fix him or help him. a lot of women stick around trying to 'fix' a man even when she's better off leaving.
She meets him while he is defending his friends, also, not only he does that but is "brave" enough to get physical for his friends. Maybe she saw his loyalty, also, he is pretty smart

After Skylar professed her love for Will, she should have waited for his response. By her saying "Will?", she spoke first and allowed Will an out. He who speaks first loses. When she said "I love you", there was pressure on Will to say what he felt. She let him off the hook.
