    How To Make Lamb Kofta Curry | Ep 596
    500g lamb mince
    1 tsp salt
    1/2 tsp black pepper
    2 crushed garlic cloves
    1 tsp ginger paste
    1/2 tsp ground coriander
    1 egg
    3-4 tbsp olive oil
    1 brown onion, finely diced
    3 tbsp olive oil
    2 crushed garlic cloves
    1 tsp ginger paste
    2 cups passata (tomato puree)
    1 tsp ground coriander
    1 tsp salt
    1/2 tsp black pepper
    1/2 tsp ground turmeric
    1/4 tsp ground cinnamon
    1/2 tsp cayenne pepper
    1 tsp ground cumin
    1 tsp sweet paprika
    1 cup cold water
    3 bay leaves
    Garnish with coriander. Optional: add coconut cream or thickened cream

    Thanks Henry, looks easy enough for even this 60yr old beginner to try for tomorrow nights meal. I even have all the ingredients, which I never had before prior to finding your BRILLIANT chanel. Such good food I've made, no longer needing tomato sauce for help at the end. 👍.

    For us Mere Mortals without a million hours restaurant kitchen experience making meat balls, look for an old fashioned ice cream scoop - the kind with squeeze handles and a thin piece of metal that flicks around inside the scoop. They come in several sizes but the medium to large ones you find in the local supermarket scoop up about 2 table spoons which looks to be about the size of Henry's kofte meatballs and every meatball will be the same.

    There are never enough lamb dishes and this one looks great! I must say though, your black pepper looks to be ground a lot finer than we normally see here. If I remember correctly, that makes it taste much better.

      Depends on the dish, e.g on sandwiches, salads etc, coarser pepper tastes better as you feel the kick. But sometimes finer is better

    Would you treat frozen mince any different than fresh? I don't prefer frozen, but it is what it is. I find it just doesn't perform as well as fresh. Bread crumbs? Or something else?

      Frozen doesn’t stick together well, but adding the egg should make it stick again, or else adding bread crumbs as well should do the trick!
