Cooking on a Budget! MAKE A NEW MEAL FROM LEFTOVERS!! // ONE POT MEAL!!

I was about to cook something from scratch but found a couple of things that I had already cooked and made it work!
Leftovers are not always guaranteed around here. Sometimes I have them and sometimes I don't. I was surprised to find those two chicken thighs in the fridge because that chicken was good the first time. I think it is because we are transitioning around here. There's really no dinner time, my children are getting older and are busy working or with after school activities. Everyone comes and goes at different times and sometimes they already picked up something to eat before they get in.

That looked delicious. Another idea with those leftovers could have been putting Mexican seasonings in your rice/chicken/pepper combo and then making burritos or tacos out of them (if you had tortillas). Enjoy your videos...thanks for sharing!
