Ingredients for the Rainbow Cake in grams( I use 7 inch pans):
- 110 gr Softened Butter
- 40 gr Coconut Oil
- 160 gr Sugar
- 2 tbsp Vanilla Extract
- 3 Eggs
- 270 gr All Purpose Flour
- 3 tsp Baking Powder
- 120 gr unsweetened full fat yogurt
- 60 gr Milk
- 1/2 tsp Salt
- Food Coloring
Ingredients for the Blue Drip:
- 100 gr melted White Chocolate
- 40 gr Heavy Cream
- Blue Food Coloring

Ingredients for the Rainbow Cake in cups( I use 7 inch pans):
- 1 stick of Butter
- 3 Tbsp Coconut Oil
- 3/4 cups Sugar
- 2 tbsp Vanilla Extract
- 3 Eggs
- 1 3/4 cups Flour
- 3 tsp Baking Powder
- 1/2 cup unsweetened full fat Yogurt
- 1/4 cup Milk
- 1/2 tsp Salt
- Food Coloring
Ingredients for the Blue Drip:
- 3.5 ounces melted White Chocolate
- 2 1/2 tablespoons Heavy Cream
- Blue Food Coloring

Ok Emma, this cake is seriously delicious😋Besides being totally aesthetically pleasing to 👀 at it's sooooooo good, moist and flavorful & great crumb. I couldn't help but slice into it before dinner because I wanted to c the inside. Anyways, my family totally dove in & destroyed the first piece. Then we ate dinner & after they had a whole piece,lol❗I sent a pic of the cake to my son & he texted me back, "I'm coming over!" Well he did & ate 2 pieces. Needless to say your cake was a hit😍 Sorry for the lengthy message I just wanted u to know how great it was❗I know it's small but I put it as my profile pic. Yum, Yum !! Hope u have a wonderful week😘
Ps, it's not quite as pretty as yours but I'm still working on my icing skills😬It doesn't seem like it should be so hard to get that nice smooth flat top & sides but surely I'll get there, right😏lol. Maybe I should start from the sides & then to the top like u do. I've always done the opposite.

@@emmasgoodies can I use a 8 or 9 inch pan to make this also best alternative to coconut oil? How many eggs in a larger pan! I tried it today and found the cake didn't rise much?

@@emmacocks2891 u can use veggie oil or canola oil (i would recommend using a neutral oil like veggie over olive), but really, any kind of oil works (you must use oil though). this recipe isn't supposed to rise a lot. if you want it to rise more, just use more batter. double the recipe for 8/9 inches

Although I have found a few other bakers using this technique, nobody else figured out that if you turn the cake upside down it has the beautiful curve of the rainbow! You are truly a master of your craft! I have made this and I'm very pleased with how it turned out! Thank you for sharing your wisdom with us.
Yes, but you must put the colors in reverse order in each pan.

Really stunning, Emma! One of the most beautiful rainbow cakes on the whole of CZcams IMO. Such beautifully defined layers...*and* you created a recipe that anyone can recreate at home! It has everything anyone could want from a rainbow cake: the rainbow, the white frosting as the clouds, and the blue ganaches as the sky on top! Fantastic!

HI! Okay so I know I am late to the party. I just discovered your channel through this video. I love this recipe so much because I wanted to do rainbow cake for my bday and exactly like you said I dont have that many pans or time. I was trying to find and alternative and I just fell in love with your channel. You seem like such a SWEET person and I love your baked goodies and I will definitely make more of them soon. And also I love that you list your ingridients in both cups and grams, it makes life so much easier. Keep up the good work. You are amazing!!!
I used standard 9-in. pans and my layers were really thin (just noticed that Emma recommends 7-inch). The thin layers aren't necessarily a problem but I just prefer a thicker cake layer to offset the frosting. I would make this again and double the recipe if using larger pans. The rainbow effect turned out great!

I wasn't sure if I was going to be able to pull this cake off. but I did minus the ganache, and that is only cause I didn't feel like running to the store for white chocolate. I made this cake for my daughter who turned 7, it was a hit. Thank you!
