- Chicken 65 is one of the most popular snacks and a starter recipe all across India... It is made using boneless chicken pieces marinated with some spices and deep fried. I remember having this at Buhari hotel in Chennai couple years back and the flavours stuck with me forever. Try my recipe as I try to recreate my food memories of the place and the dish.

CHICKEN 65
Preparation Time: 15 minutes + marination time
Cooking Time: 20 minutes
Serves: 2
Ingredients:
400 gms chicken, cut in cubes
½ cup yogurt
1 tbsp ginger garlic paste
1 tbsp curry leaves, chopped
Black pepper powder to taste
1 tsp Roasted cumin powder
Salt to taste / नमक स्वाद अनुसार
2 tsp Degi red chilli powder / Kashmiri Red chili Powder
2-3 tbsp rice flour
Oil to deep fry
For Tempering
1 tbsp oil
2 green chillies, slit
1 tbsp garlic, chopped
10-12 curry leaves
Black pepper powder to taste
Process :-
• Add chicken cubes, yogurt, ginger garlic paste, curry leaves, black pepper powder, cumin powder, salt and red chilli powder.
• Mix and coat the chicken well, set aside to marinate for minimum 30 minutes.
• After margination, now add rice flour and mix well.
• Heat oil in a kadhai and deep fry the chicken until crisp.
• Drain on an absorbent paper and set aside.
• For tempering heat oil in a pan, add green chillies, garlic and curry leaves, saute till fragrant.
• Add the fried chicken and toss well. Add black pepper powder and toss well.
• Serve hot.

I tried it for many times, there is no words to explain the experience! Mind Blowing! It's a Classic Chicken 65-nobody can compete with the taste as you have described!

@@aksharatiwari4598 : I used light oil (sunflower/soyabean); Regarding the marination - I tried marination from 10 minutes to 3 hrs. But I did not find the big difference from my guests whom I served ( however I myself could feel the difference between 10 minutes and 3 hrs.- however, the kadi patta did the trick, because of its strong smell.)

Dear Mr. Brar you are one of my favourite chefs. Chicken 65 was named Chicken 65 at Buharis because it was first made in 1965. (according to the owners)
Was this your take on their Chicken 65? At Buharis they always add eggs while marinating the chicken as well as a little garam masala and they never add curry leaves in the marinade but rather while frying.
In the 80s I don't think they used rice / corn flour just before frying and even now they don't but nowadays in other restaurants chef do add.... usually cornflour or rice flour or chickpea flour is used for Chicken pakoras.
This recipe is so awesome!! I have made it thrice in a week.... it's a original recipe... totally restaurant quality.... just awesome👍👍👍

Can you please make a video on frying techniques? like deep/shallow, whether to keep flame high or low or medium and for how much time... How much time to fry a chicken or other foods, how to ensure that its fried till inside and not too much fried outside...

A like for the cameraman who expertly zoomed out of frame when the red chilli was added. A sub for the extreme red Bydgi chill and the effort to make it so red.😉
And when the camera came back, there is stain of yellow on the sides. So chef missed to say he added turmeric as well.
