Easy Victoria Sponge Cake with Cream and Strawberries // Tutorial // Movers + Bakers

  • This British classic has two delicious vanilla flavoured sponge cakes filled with softly whipped cream, jam, and strawberries. The Victoria sponge cake has to be one of the most simple but elegant cakes out there, making it a British classic loved the world over. Perfect for afternoon tea or any celebration!
    INGREDIENTS
    For the cakes
    110 g (½ cup) unsalted butter
    165 g (¾ cup + 1 tbsp) caster sugar
    215 g (1 ½ cups + 1 tbsp) plain (all purpose) flour
    1 tsp baking powder
    0.5 tsp bicarbonate of soda (baking soda)
    0.5 tsp salt
    2 large eggs
    2 tsp vanilla
    125 g (½ cup + 1 tbsp) yogurt (I used Greek)
    For the filling and decoration
    120 g (¼ cup + 1 tbsp) good quality strawberry jam
    200 ml (¾ cup + 1 tbsp) double (heavy) cream
    0.5 tsp vanilla
    1 tbsp icing sugar, plus extra for dusting
    4-5 fresh strawberries, sliced (optional)
