Haha that's a very true comment "it tastes like Swiss Gruyere". The history of that cheese started when a Swiss guy (David Moser) was travelling somewhere from the Russian Empire to Switzerland and when he saw the highlands of Kars he was reminded of Switzerland and decided to produce Swiss Emmantel which became Kars Gravyeri haha. I think he lived and died in Kars and his family is still there. You should have checked "Boğatepe" in Kars there is even a cheese museum.

I strongly recommend a tour to the area more south - Van, Bitlis, Mardin, Urfa etc. While Kars definitely has a charm of its own, in my view lake Van and surroundings is much more beautiful. Until the early 1990s the east of Turkey was a very popular destination. Then troubles in the region started and tourism almost completely vanished. The region is stunning but for a hope it never become a mass tourism destination, as all originality will be spoiled.
We’d love to explore more of Turkey!
