That "skin" on the ribs is called silverskin and its supposed to be removed before cooking. It's connective tissue. Glad they didn't make you eat it! Great job, Katina! #teamKandy 🤣
Yea I’m surprised that a chef cooking ribs for 25 years wouldn’t properly clean the meat..
Maybe they left the membrane on because they cooked it hanging on a skewer and didn’t want it to fall apart. Either way, yeah it’s weird

5:27 I’m surprised the chef didn’t remove the silver skin. They must not trim their ribs.
Depends on the person on trimming or not due to length of time cooked it comes off easily after cooking anyway so unnecessary to remove before
Leaving the silver skin is a major error on the chefs part! That’s a rookie mistake for 24 years of service!

I think it's a matter of preference. Sure, you can watch CZcams videos all day long, explaining how they remove that silver skin. Doesn't exactly make it necessary to do so. Some say to remove it because you won't be eating it, others say it helps hold in moisture depending on how you prepare the ribs. Who knows? I've had them both ways and I kind of chalk it up to this: Peeled shrimp cocktail is always easier and better tasting to me. If you handed me a big plate of jumbo shrimp cocktail that I had to peel myself, I would NOT complain!

most people don't want to bit into it, but It's super high in collagen, and good for you.
