Chicken Malai Tikka Recipe | Chef Sanjyot Keer

Serves: 4
Ingredients:
• Chicken 500 gm
• Salt to taste
• Black pepper 1/4th tsp
• Garlic paste 1 tbsp
• Ginger paste ½ tbsp
• Hung curd 3/4th cup
• Fresh cream ½ cup
• Almond paste 2 tbsp
• Green chilli paste 1 tsp
• Garam masala 2 tsp
• Kasuri methi 1 tsp
• White pepper powder 1/4th tsp
• Salt to taste
• Fresh coriander leaves 1 tbsp (chopped)
• Corn starch 1 tbsp
• Live charcoal + oil
• Bamboo skewers as required
• Ghee 2 tbsp
Methods:
• Slice the chicken breast from between and further slice the chicken into thin slices, transfer it to a mixing bowl, add salt & pepper, ginger paste and garlic paste, mix and marinate the chicken for 15 minutes.
• In a separate bowl, add hung curd, fresh cream, almond paste, green chilli paste, garam masala, kasuri methi, white pepper powder, salt and fresh coriander, mix well, add corn starch and add the marinated chicken, mix and coat the second marination properly, marinate the chicken for at least 1 hour.
• Place a bowl in the centre and Place a live charcoal in it and add few drops of oil, cover and smoke for 3-4 minutes. Discard the coal.
• Skew the marinated chicken in the bamboo skewers.
• Heat a pan on medium heat, add ghee and grill the chicken from all the sides for 3-4 minutes.
• Your chicken malai tikka is ready to be served, sprinkle some chaat masala and squeeze some fresh lemon to elevate the taste, serve hot.

I tried this today. It turned out soooooooo yumm. Thanks for this recipe. It turned out just like restaurant. I had had this once at a dhaba and what i made today tasted exactly like it. The charcoal gave it that authentic flavour.
A few changes i made as per availability
- i used 1 cup hung curd and 1/4th cup milk instead of cream.
- Red chilli paste instead of green chilli
- Corn flour instead of corn starch.
- pepper jeera powder instead of pepper powder and a little extra than mentioned in the recipe.
- i used charcoal and butter as mentioned in the recipe, but if you dont have charcoal available use coconut shell in place of charcoal.
Corn flour was not there in his recipe
How can I make Almond paste at home? Or what can I substitute it with?

I dont know which cup you used but normal cooking cup is of 240ml and according to that i ended up adding more curd and cream than required (almost double). Please mention quantity in ml or tbsp from next time.

@YourFoodLab Chef Sanjyot, You usually recommend in your other recipes that chicken should be left overnight only with the first marination, which includes ginger and garlic paste. However, when curd is added, it tends to release water, which can loosen up the marination. In this recipe, you are suggesting that it be left overnight in curd marination. I’d love to hear your thoughts!

The green sauce is just mint and coriander leaves with some garlic, a green chilli, salt and lemon; grind them all together in the mixer. You can also add some thick yogurt.
Hi, amazing recipe. Can you tell me if I’m using Oven to make malai tikka, what settings to keep it on? And will I need to smoke it before putting in oven?
amazing taste...if u follow the recipe then it will taste heavenly. I m yet to try to make in oven hopefully the taste stays the same.

1) How to make green chili paste?
2) how to make almond paste?
Really want to make this recipe but confused on the ingredients. All the almond paste recipes online have sugar in them. That didn’t make sense to me in this recipe.
Just take some green chillies and blend them without water. Ur green chillies paste is ready .
To make almond paste just soak almonds around 10 in hot water for 10-15 mins peel the skin of the almond &grind them with very little water to get a thick paste
