  • Ghoi Pa (ກ້ອຍປາ) is a Lao dish made with raw fish. In this video, I will show how to make the Ghoi Pa and Gang Pa, a soup from the bones of the same fish.

    thanks for taking time with the display of each ingredients in separate little bowls. keep this method please. now I know why fish soup always go together with raw fish salad. I also find using the pressure cooker for the fish soup speeds up the time.

    I love pak highway! When I was a kid, I found it growing in our backyard and actually eat it with dum muck houng. It goes together perfectly!

    Yummylicious. Nana, Is this fish you use for making Raw Fish salad Freshwater fish. Right? If then, where Can I get Japanese Sashimi Quality freshwater fish?? Fish looks like sea bass or trout freshly caught from the ocean.... Also, where can I find Banana blossom??? That salad makes me hungry all of the sudden... BTW, I think I will enjoy Goi Pla cause I am huge fan of sushi and sashimi and any meat dishes that are Raw one like raw version of beef larb and Raw shrimp called Goong Chae Nam Pla etc...

    Wow- what an incredible meal! I want everything! :-) That "roadside herb" I think I may have come across before- is it also called "gahn yang"?

      Pel Qel I'm not sure what "ganh yang" is, but we found that it's "everlasting pea" in English.

      Thanks! I found some pics online of the everlasting pea- very pretty flowers it has! I learned about the other herb- gahn yang- from a Hmong friend, so that may be the Hmong name for an herb you might know in Lao. It was used to flavor fish steamed in banana leaf, and has a beautiful fragrance, if that's any help.

    "Pok peo" is vietnamese coriander and "sawtooth" is culantro. I hope that helps on the herb name. I love your cooking. Keep up the great work!! :)

    That raw fish dish looks interesting. Can we use other sushi grade fish like yellow tail if we do not have access to sea bass?

      It might get expensive using sushi grade fish. you could use any kind of fish for this.. such as tilapia.

    Do you know how to make koy pa pan kao kok with rice crispy on it. You wrap with lettuce or whatever vegetables you like to wrap & dip with the sauce.

    Asian cooking has not catch up to date. MSG is terrible, leaves after taste, bad for your body, promotes ache for joints and make me extra thirty. Good cook should not need MSG to enhance the flavor. All the ingredients in the making of this sounds delicious enough. Wish people would eliminate the MSG in the food!

      I agree with you that MSG has a nasty aftertaste if you add too much, like if you add too much salt or sugar. And like other ingredients, some people may have bad reaction to MSG. If that is the case, people can leave out the MSG or any other ingredients that give them bad taste or bad reaction. Like I said in my channel information, I'm not a nutritionist. I'm just sharing how I learned to make the dishes. If other people have any recipes for the same dish ues and still tastes the same, I would love to try.

      I think you need to do more research on MSG and your own health before accusing it of being bad. It's ridiculous. Do you not know it is naturally found in nuts, fruits, plants and meat? There is no study that points that MSG ALONE causes these symptoms. Anything in excess can cause you to be unhealthy. Asian food are one of the healthiest in the country. Our food is almost, if not all organic and farmed raised. Saying if you're a good cook you shouldn't use it in food is rude. If you find it leaves a bad after taste then you are using it wrong. It is an additive like salt and sugar. Please consider what you are saying and don't base it on rumors you hear. There's generation of people like you and me that grew up with it and are healthy as can be.
