You do realize that they do this intentionally.. There are restaurants, lounges, concerts, libraries, movie theatres, hotels etc. everywhere around the world that are hidden and exclusive to the wealthy. Places paparazzi, have no access to. They need, and seek constant publicity to convert the attention in cash. Notices the section set up for fans to take pictures, they're attending a venue hoping to be seen. We never see them when they're getting cosmetic procedures do we.
Well they do obviously call the paparazzi on themselves. I'm sorry, there is no way they know Taylor and her friends are going to go there unless they were told.
